It’s just as well. A complex wine like you doesn’t really need a reason, I suppose. So what can I get you? Steak, maybe? Some fine cheeses? With all your different layers of flavor, I guess anything on the menu will do brilliantly, won’t it? Tell you what, you just your smooth, supple self sit down and relax while I make you up something special for the occasion.
My, that is an enchanting aroma you have this evening. It seems to change with every sniff! Is that cherry, raspberry, cola, and mint I smell? Maybe it’s pepper, cedar, dark chocolate, and violets? Oh, it doesn’t matter. Your mouth-watering acidity, lingering fruit flavors, and firm, slightly chewy finish that’s never harsh are all I care about. It’s been far too long since the last time you came along, my dear.
Shhh. Let’s not spoil this moment with any more words. We both know you won’t be here long. You’ll end up in another cellar for several years or decanted somewhere far from here. - Aging: 18 months, 100% French oak, approximately 60% new, Remond, Gamba & Bossuet cooperages
- Analysis: 14.1% alcohol, 3.65pH, .59 TA, no residual sugar
- Ingredients: Sonoma County grapes, tartaric acid (from grapes), wine yeast & bacteria cultures, oak compounds (from barrel aging), natural and added sulfites.
- Bottled April 17, 2008, unfined, lightly filtered.
- Decant: yes – both for sediment and development
- Drink now or hold: yes/yes to 10-15 years from vintage.
Cherry, raspberry, dark chocolate, licorice, orange peel, violets, cedar, cocoa, tobacco, cola, pepper, coffee, mint. In has a smooth, supple entry, is rich but never heavy, has mouth watering acidity that leads to a firm, slightly chewy yet not harsh finish that promises great things to come. The fruit lingers on the palate long after swallowing.
