Aged
Pliny the Elder’s recipe for Syrah [or headache remedy]:
-Take 1 carrot
-Make sure carrot is of good lineage
-Seriously - carrots of unscrupulous lineage will sully the wine
-Convince the carrot to become a grape
-Smother carrot with the blood of whatever’s nearby
-Add a dash of tree bark for extra flavor
-Say, has anyone noticed it’s getting awfully warm?
Features
2008 White Oak Vineyards & Winery Syrah, Napa Valley 750ml 4-Pack
Aromas of plum and maraschino cherry with a hint of smoke. Aromas fold into flavors of ripe raspberry, white pepper and soft oak. Finishing with bright acidity and fine tannins all integrated into a long, silky finish.
Specs
Harvest: Manually harvested. Picked at optimum ripeness and hand sorted in small bins.
Technique: The fruit was destemmed and crushed into stainless steel fermentation tanks. Inoculated with Pasteur Red yeast, the fermentations were completed in about 8 days. During his time the wine was pumped over twice daily to facilitate extraction of color and tannin. The wine was then held on the skins for another 12 days to complete malolactic fermentation and soften some of the harsher tannins. The wine was gently pressed using a membrane tank press, and then racked off the gross lees into barrels. These barrels were then racked quarterly to allow for natural clarification
- Appellation: Napa Valley, Chiles Valley
- Varietal Blend: 100% Syrah
- Volcanic soils, strong gravel outcroppings with 20% Serpentine soil and shale deposits. Elevation: 1400 feet.
- Aging: Aged for 18 months in barrels of which 50% were new. 100% French oak.
- Bottled May 25th, 2010.
- Production: 1127 Cases

White Oak Vineyards & Winery
- Owner:
- Bill Myers
- Founded:
- 1981
- Location:
- Healdsburg, CA
Born in Los Angeles, Bill Myers worked as a building contractor and salmon fisherman in Alaska. During the 1970's, Bill relocated to the bucolic town of Healdsburg, California, sold his boat, purchased his first vineyard in the Alexander Valley and began to make wine.
With his newly purchased vineyard, a tiny tasting room and wine production facility just off the square in downtown Healdsburg, Bill started making wines. He quickly became recognized for producing wonderful Chardonnay, Zinfandel and what was to become White Oak's flagship wine: Sauvignon Blanc. In 1991, Bill took home his first Sonoma County Harvest Fair Sweepstakes Award for his 1990 Sonoma County Chardonnay.
Presently, White Oak Vineyards & Winery has nearly 750 acres of vineyards divided between the Napa, Alexander and Russian River Valleys. Roughly 10% of this fruit is used in White Oak wines with the balance being sold to other well known prestige wineries.
