Speer Vineyards chose beautiful Paso Robles in California’s Southern Central Coast region because of its ideal climate and soil. The days are hot and dry while the evenings are quite cool from the Pacific Ocean breezes. This climate lets the grapes ripen slowly, which gives them many layers of concentrated flavor, very deep color and intensity.
The wine is aged in French oak 12-14 months, giving it a very rich, tantalizing bouquet of dark cherries, black currant, cedar and tobacco with earthiness, and soft vanilla undertones. The tannins are very firm, a signature of the appellation, with a long, lingering finish. This is a drinkable wine today, but it also has the ability to age for many years. This wine is a perfect example of why you do not have to go to Napa Valley to find excellence in a Cabernet.
This easy drinking food-friendly Cabernet is best enjoyed with all cuts of red meat, hearty stews, homemade macaroni and cheese and a juicy burger.
