2011 Hansen Cellars Cabernet Sauvignon, Lodi 750ml 6-Pack
The nose has multiple layers of red and dark berry characteristic, with some notes of cedar and vanilla. The wine is medium bodied, with nice layers of berry fruit, soft approachable tannins, and earthy structure with a good finish from balanced acidity.
Vineyard: The grapes come from one of Lodi’s most well respected growers. We selected two of their vineyards; the vines are 12 and 16 years old. These vineyards benefit from the deep and rich soils that make-up the Lodi Appellation.
The vineyard is on a two-wire cordon trained trellis that is set-up for machine harvesting. The pruning system provides good canopy for protection from the direct sun, while allowing maximum air circulation. The grapes benefit from warm sunny days and cool nights as a result of gentle breezes coming from the San Francisco Bay and the Delta waterways.
The vineyard was harvested by machine at night after the evening breezes have cooled the grapes. The grapes were picked at 24 – 24.5 degrees of brix, which provided outstanding balance between full ripeness of fruit and acidity.

Vinification Process: The grapes started with a cold soak for 24 hours, after which fermentation began and lasted six days. During fermentation, the free run juice was pumped over the “cap” twice per day to achieve maximum skin contact. The wine was then soft pressed and put into 30% French and American oak barrels and 70% in stainless tanks. The wine was aged for 13 months before final blending and bottling.
