By my barnacled trident, let it be known to all mud-dwellers that the fruits of my domain shall be enjoyed with this Vinum Cellars Chenin Blanc! From the humble clam to the mighty tuna, this wine's bright, tropical character blends harmoniously with the briny succulence of all water-borne flesh, for a taste sensation truly regal in its exquisiteness!

Let no cioppino stew in solitude! Let no oyster go un-Vinumed! Let no wild Alaskan salmon share gut-space with an inferior wine! Yes, I know many people mistakenly call them "king" salmon! I refuse to lend their specious claim to the throne my royal imprimatur by repeating that misnomer!

Anyway, yeah! I, King Neptune, decree that you shall drink this wine when you eat seafood! And if anybody knows fish, it's me! I married one! That's a whole other thing I don't have time to get into right now! Farewell, surface-crawlers! Mark well my words this day!

2012 Chenin Blanc/Viognier, Clarksburg 750ml 6-Pack

This crisp and refreshing Chenin Blanc based cuvee is a vibrant pale yellow color, the aromas are bright with tropical pineapple, guava and ripe peach notes which express subtle clover honey notes. The palate is uniquely Chenin in its generous acidity, honeysuckle and mineral capacity, lemon lime and citrus notes but by no means acidic.

Vinum Cellars is a small California Winery well known for producing wines of the highest quality. The grapes are selected from premium coastal and cool climate growing areas within California. The wines are made by hand in small batches to allow the varietal character of each wine to express itself.

Food Pairings: This is an excellent summertime sipper as well as oyster and seafood wine. Try making a minette sauce with this wine (instead of vinegar); it will go great with fresh oysters on the half shell. Vinum Cellars is a collaboration of winemakers Richard Bruno and Chris Condos, who first became friends while they were students at UC Davis. They share a long standing passion for Chenin Blanc and fondness for the more obscure grape varieties.

After graduation, Chris went to work for Pine Ridge as Enologist, and Richard went to Bonny Doon as their distiller. Shortly after, their friendship was solidified over Chenin Blanc with the creation of their first wine "Pointe Blanc". Currently the Vinum Cellars team is working with over 14 grape varieties from El Dorado and San Benito Counties to Napa Valley.

Our basic winemaking philosophy is to work with great grape growers to develop the best fruit in the vineyard. We pick the grapes at optimal ripeness and gently process the fruit. We are very experimental with yeast strains and use different cultures for each variety. Our whites are barrel fermented slowly and aged Sur Lies in small French Oak barrels. With our reds, skin contact is optimized by the use of small open top fermentors, hand punch downs and extended maceration before pressing. Our belief in the use of older French Oak barrels allows the varietal fruit of our wines to be expressed. We are committed to experimenting and learning new winemaking methods while preserving an old world approach.

As an environmentally conscious company, Vinum Cellars works only with sustainable growers to create Eco-Friendly products. The packaging choices were made specifically to minimize their carbon footprint. Some of those features are: Domestically produced light weight, Eco-Series glass; labels and cartons using only non-toxic, water based inks and each of these suppliers recycles 100% of the waste created by manufacturing our packaging.
