Tony sources the grapes from select California vineyards and allows them to hang on the vines until they achieve complete maturity in order to provide the perfect start in creating the wines of Hangtime.
Our Hangtime Cabernet exhibits the aromas of lush black cherry, blackberry and cassis layered with nuances of cigar box and tobacco. The tannins, which are well rounded, soft and supple, are coupled with toasted oak that, together, showcase the silky finish. Subtle hints of oak and spice, married with lively tannins, allow this wine to be enjoyed on its own or with your favorite dish, be it a nice Tuna Steak or a thrown-together BBQ around a campfire with friends. Tony's winemaking approach behind Kick Back Red is to blend a combination of premium California varietal grapes. For the 2011 vintage these included Cabernet Sauvignon, Petite Sirah, and Mourvedre which were blended to create a wine that is delightfully balanced with rich flavors of blueberry and plum. A pleasing full mouth feel is complemented by a delicately sweet finish. Our Kick Back Red pairs excellently with cheese plates featuring blue cheeses such as gorgonzola or with tomato and garlic based dishes such as a beef and tomato stew.
