There’s something happening in Gilbert Cellars. Something… terrrrrible.

...Terribly delicious, that is! What, you thought only scary things are in cellars? Hey, come on. That’s outdated Victorian thinking! Don’t go all Freud on us here! The truth is, cellars are where people hide cool stuff like knives and ghosts and illegal beer. Why, even the pyramids were just big cellars, and they were full of gold and kings! When you hear "cellar," don’t think about some repressed English fuddy-duddy trying to keep the world from having fun. Think about Gilbert Cellars. Think about the 2012 Syrah and the 2014 unoaked Chardonnay. Think those are scary? Maybe if you’re some other wine company worrying about lost profits! But for most of us, this wine is a good memory waiting to happen. Just like a cellar.

It’s not a place to hide the bodies. It’s some extra space you can use for the things you really love. Your drum set, a ping-pong table, storage for your wine. A cellar isn’t for fear. It’s for love.

Features

2012 Syrah, Columbia Valley 750ml 2-Pack

Meaty aromas of smoke, graphite, and black pepper overlay a solid core of black cherry, pomegranate molasses, and zested blood orange. The anticipated overwhelming intensity is both confirmed and assuaged as the alcohol, acid, and dense tannin blend seamlessly, unfolding over the entire palate and holding it in a warm embrace through a lengthy enjoyable finish. Concentrated, balanced, and intensely favorable.

Vinification: Fruit for this blend was destemmed, but not crushed, into 1 ton fermentation bins. The must contained approximately 75% whole berries. The must had a pre fermentation maceration of about 84 hours at 480F. During fermentation, extraction was achieved via hand punchdowns and pump over with macro aeration, several times daily. The wine fermented dry on the skins and was immediately pressed and transferred to barrel.

Ageing: The wines were aged in barrel for 18 months.  41% were  new French oak and 59% were  neutral French oak.  The wines were racked twice in the cellar. All individual wine components, including new oak barrels, were kept separate until final blending. The wine was bottled on April 18th, 2014.

2014 Unoaked Chardonnay, Columbia Valley 750ml 2-Pack

Aromas of lemon meringue and pineapple dominate the nose.  Behind the fruit there are hints of minerality mixed with a subtle white pepper character. The palate is focused and balanced with well integrated acidity. Its a very approachable palate.

Vinification: Fruit for this blend was harvested in October, 2014  The grapes were destemmed and lightly crushed.  The juice was transferred to tank and cold settled for two days at which time it was racked off the gross lees and warmed.  It cold fermented for about 3 weeks at the end of which it was inoculated with ML bacteria to initiate MLF.  The MLF was halted after approximately 20% of malic acid was digested.  The wine was heat/cold stabilized and sterile filtered prior to being bottled on February 25th, 2015.

Here in the Ahtanum Valley, just west of Yakima, our ancestors chose the agrarian life, all the way back in 1897.  The simple joys of our rural community, and the products it bears, still speak to us today.

In 2004, the fifth generation of Gilberts began the work of producing true-to-varietal wines from our vineyards in Washington state. What we found out is that wine brings us closest to family and friends and the truth and beauty that we crave. We’d rather be on our patio, candles lit, with a great dinner and a bottle of wine than almost anywhere else. We are privledged to share that with you through our wines produced with great care from grapes grown on the Wahluke Slope, in the Horse Heaven Hills, and the Ahtanum Valley.

Besides making wine, we make our own fun, which involves throwing a party (or two) and inviting our favorite musicians and artists to share their talents with us.

Growing and creating products and experiences that matter is both our ends and our means. We believe that what we’re doing matters: we’re making an authentic product that comes from the place that we love. In a time when everything comes from everywhere, our wines come from a place that isn’t anywhere else. Cheers!
