Like the Pacific whose waves crash onto the California beaches, the Deep Sea Paso Robles Merlot is primal. Pure. Natural. Exotic, yet somehow familiar.
Unlike the Pacific, it doesn't smell or taste like brine. It brings aromas of leather, cedar, dark cherry and vanilla flowers, followed with flavors of raspberry, plum, and hints of chocolate & pepper.
That said, if you wanted to fill your pool with this Deep Sea Merlot and splash around in it with your snorkel, we wouldn't think you were weird or anything. Unless you didn't invite us.

2011 Deep Sea Merlot, Paso Robles 750ml 5-Pack
This soft, elegant Merlot was aged for 19 months in French Oak barrels. Aromatics of leather and cedar are followed by dark cherry and vanilla flowers. Raspberry and plum fruit flavors are complemented by hints of chocolate and pepper. Plush fruit and balanced tannins give way to a pleasant, lingering finish.
The fruit for our 2011 Deep Sea Merlot was sourced from the highly regarded French Camp Vineyard in San Luis Obispo County on the Central Coast of California. The Merlot was harvested on October 5th. 2011 was considered a difficult growing season by many, but we were fortunate in our vineyard source and our harvest numbers were excellent. We picked the fruit early to favor the elegant flavors of Merlot. At harvest, the ratio of sugar to acid was excellently balanced, producing soft, silky tannins.
The soft flavors and tame tannins for this vintage required a cautious approach to barrel selection. We wanted to preserve the elegance of the fruit, so we elected to age the Merlot in 50% new French Oak with mostly medium toasts and the remaining 50% in neutral barrels.
The 2011 Deep Sea Merlot shows classic leather and cedar notes followed with a hint of cherry cola and vanilla. The entry is subtle but is quick to show soft tannins that complement the red fruit flavors and balanced acidity. The finish is a lingering reminder of all the classic flavors of Merlot.
