I can't believe I said it. I had fallen in love on our second date, and all I wanted to do was make an impression, so I decided to ask her, "Won't you be mine?" You know, like it says on a valentine, but in a bit of a Freudian Slip, out came "Won't you be wine?" instead.

I couldn't help it! I had Chateau Bianca Oregon wine on my mind. From Pinot Noir to more Pinot Noir, it was all I could think about. I'd been wanting it for dinner, but it wasn't on the menu, and it had slowly become the one thought I had going through my head.

But I was going to use the line. I had already planned on doing it, and I was going to impress her, with nothing holding me back. And that's when I screwed up by saying "Won't you be wine?" Oh, Chateau Biana, why must I love you so?

2003 Estate Reserve Pinot Noir, Willamette Valley 750ml 2-Pack

This unusually full bodied Pinot Noir truly is remarkable for its bright fruit flavor of black cherry and lingering tannins.

The wine has an incredibly deep red brick hue. The aromatics of this wine are predominantly black fruit in nature. Hints of blackberry, black cherry, and warm vanilla are accented with a touch of toasted wood spice. The wine is full and rich on the palate with a nice balance of tannic and acid structure-truly pleasing for a wine of this age. Dark fruit and white pepper characters show on the palate and the finish.

This wine will pair very nicely with grilled Salmon, smoked pork loins, grilled meats, or roasted vegetables. Try it with truffles, dark chocolate of figs and blue veined cheese for a special treat.
The fruit for this wine comes exclusively from our estate vineyard and is a single vineyard source. We picked the grapes for this wine between October 2nd and October 6th. We use a vertically shoot positioned canopy or VSP which helps to expose the fruit to optimal sunlight as well as allowing for proper air circulation to keep the fruit dry under wet conditions. This wine has beautiful color due to the special care the vines receive from the shoot positioning as well as leaf removal.


2002 Estate Reserve Pinot Noir, Willamette Valley 750ml 2-Pack

This classic Burgundy style Pinot Noir has pretty floral, spice, and earth overtones.  The fruit character is well balanced with the toasted oak character and the well-balanced tannins.  Delightful with rich sauces, game dishes, salmon, pastas and more.

This bottle aged beauty is a real treat for those who have never enjoyed an aged Pinot Noir.  Use a generous bowled glass to get the full aromatic effect.  Just remember, you can’t leave this one on the counter, open it and drink it!

2003 Estate Reserve Pinot Noir, Willamette Valley 750ml 2-Pack

The wine was fermented in small open top fermentors and was inoculated with several different commercial yeast strains to enhance fermentation kinetics. The cap was punched in twice every 12 hours to encourage color extraction, homogenization, and to keep the cap moist.

The pomace was pressed off when the juice was dry. The wine was allowed to settle before going to barrel and aging. The wine was kept in small (229 liter) oak barrels for 24 months. 30% of the barrels were new French oak and the balance of the barrels were 2-3 year old.

Chateau Bianca Winery is a family owned and operated winery established in the mid-1980’s. The annual production is intentionally small and committed to high quality, while simultaneously offering an exceptional value. Winemaker Andreas Wetzel’s attention to detail consistently results in many prestigious wine awards. Andreas’ great-grandfather began wine production in the region of Wurzburg, Germany. This love of winemaking continues, four generations later, here in the United States.
