The 2007 Tom Eddy Cabernet is rich and elegant, just what you would expect from their flagship Cab. The great conditions throughout the year helped to produce grapes that were concentrated in flavor but with balanced acidity and tannin. The wine is luscious with dark fruit permeating its core; blackberry, cherry and currant are just a few of the rich fruit flavors that erupt on the palate but with underlying essence of anise, cedar and classic herbaceous qualities, the wine’s complexity will delightfully overwhelm the senses. Just the right amount of oak is infused into the wine to round out the finish and add a kiss of vanilla to indulge one’s hedonistic side. This wine can be enjoyed now but should age beautifully for another two decades.

The 2006 Very Special Red (VSR) is a blend of two wines derived from two prestigious and distinct regions, renowned for growing world class mountain Cabernets. A barrel of Meteor Cab was hand-selected to marry with a barrel of Mt. Veeder Cab to create a balanced, rich and ultra-complex blend that really shows the qualities of both wines. The nose is classic Bordeaux Cabernet exhibiting aromas of black olive, dried cherries and anise. There are also subtle hints of cassis, leather and tobacco leaf which accentuate the bouquet and permeate the palate. A kiss of vanilla bean from the new French Oak barrel ageing adds to the dynamic quality of the wine and complements the full-flavored finish. The structure is silky smooth with robust tannin that is sure to age brilliantly for years to come. The balanced flavors and palate piercing acidity make this a great food wine…so throw a steak on the grill.
