Because of the popularity and demand of their Dry Riesling and Sweet Riesling, Pacific Rim wines thought it made perfect sense to craft a Riesling in a taste profile that was directly between their other popular Rieslings. This slightly sweet flavor profile represents over one million cases sold in the market. As wine lovers crave alternatives to heavy and oaky white wines, Riesling is experiencing a true revival (like a phoenix rising from the ashes — the inspiration for our label artwork). Portraying bright crispness, subtle sweetness and aromas of jasmine, pear and apple, the wine exemplifies the harmony of Riesling. The sweetness plays wonderfully with fiery fare (from Thai to Mexican), while the natural acidity stands up to richer foods (from French to German).

2010 Riesling Wallula Vineyard (Biodynamic) Columbia Valley's Horse Heaven Hills 750ml
 
The wine was aged on lees for a few months and displays wonderful yeastiness, jasmine on the palate and great minerality with a dry, bright finish.  Adhering to the strictest Demeter Certified Biodynamic® farming and viticulture standards, this wine is a pure expression of Riesling. People often ask, "What do you do at the winery to make the winemaking Biodynamic?" Pacific Rim Wines' answer: "we do nothing, absolutely nothing." If they would list the ingredients on the label, they would read:  Biodynamic grapes, Sulfites below 100ppm, yeast hulls and bentonite (used for protein stability). The resulting wine is a piece of art and the truest form of Riesling.

At nearly 1,000 feet of elevation and with crystalline views of Mount Adams, their Selenium Vineyard – located north of Washington State’s Yakima River – is where they grow the grapes for their White Flowers Sparkling Riesling. Presenting beautiful floral aromatics and a clean finish, this dry sparkling wine is aged sur lie for a balanced and textured profile. This Riesling Made with Organic Grapes is the purest expression of Riesling. For all Pacific Rim's wines, they exclusively use stainless steel tanks to preserve the complex character of the Riesling grape. No oak barrels or malolactic fermentation are used in their winemaking. This Riesling Made with Organic Grapes displays aromas of jasmine and citrus. The subtly sweet profile is balanced by bright and refreshing acidity. Pacific Rim Wines has crafted a wine to pair with the fresh, local foods that today's wine lovers enjoy. This Riesling beautifully complements all manner of Asian cuisines, spicy and flavorful foods.
 
2010 Riesling Solstice Vineyard, Yakima Valley 750ml
 

Our Solstice Riesling grapes are handpicked and fermented with its native yeasts and aged sur lie for 6 to 12 months. The resulting wine is a ripe, dry Riesling with a generous alcohol content and an insanely low pH. The Solstice has concentration and all the elegance of a great Austrian Riesling. The wine is truly cellar worthy and will age for a very long time (10 plus years). We recommend pairing our Solstice Riesling with risotto, fish in creamy sauce or pork chops.

They use no pesticides and every element within their sustainably-farmed vineyard is native to the vineyard. The winery is centrally located within fifty miles of all Pacific Rim Wines' vineyards, reducing freight demands. Their winery was built to optimize efficiency of both electrical and water usage. And they use lightweight glass which significantly reduces carbon footprint. Pacific Rim Wines' package is 100% recyclable.

The 2010 Solstice from the Yakima Valley is the purest expression of Washington Riesling. The vineyard was planted in 1980, some of Pacific Rim Wines' oldest vines. The grapes mature at the highest elevation with a southwest exposure. The vines grow in shallow (18 inches) wind-blown loess deposits sitting on the top of the basalt bedrock. This is a poor, minerally driven terroir, perfect to produce a Riesling with rich complexity.
