Settling and Proud Of It
If you're one of those people who thinks "not bad" is "good enough," this Cab's for you.
Look. I'm not one of those girls looking for Mr. Right. I'm not even looking for Mr. Right Now. I'm looking for Mr. I Guess He'll Do. Why? Because I'm ready to get this show on the road. Life, I mean. He's got all his teeth, so I got no complaints.
That's my take on pretty much everything, including wine. Could I find a Cabernet that isn't fizzy? Sure. One that hasn't developed a little spritz due to traces of sugar and yeast left in the wine after bottling? Absolutely. One with luscious cherries that are just a smidge more luscious and blackberries that are a scosch more piquant. I'm sure I could. But I'm not going to bother. Why not? Because this wine is already here, and it clearly states that it's "not bad." And that's good enough for me.
Features
First and foremost: This wine is fizzy. Whether because of secondary fermentation* or elven magic, there is an effervescence to this wine that blows off after an hour or so. The nose has notes of cherries and red berries; luscious cherries and piquant blackberries and notes of sage and cedar; tar and pepper; nutmeg and mint on the palate. Supple tannins clutch and nuanced finish.
*Secondary fermentation occurs when traces of sugar and yeast are left in the wine after bottling. The wine develops a little bit of spritz or tiny bubbles.
