The only thing that could make this jam better is if it contained some kind of science so when you dropped your toast the anti-gravity particles activated preventing the toast from landing jelly-side-down. That may sound like an excessive amount of technology for toast, but I drop a LOT of toast. Which I guess is what I get for wearing mittens 24 hours a day.

Wicked Good Red Raspberry Jam
Wicked Good Red Raspberry Jam was "the winner" in a blind taste test when compared to three other raspberry jams--(NH Magazine).This jam is made from local summer fruiting raspberries containing cane sugar, pectin and lemon juice to enhance the flavor and texture. Makes an attractive presentation. This jam is my daughter, Claire's, favorite. Fresh raspberries are high in antioxidants. Contains seeds. Try it as a filling for a jelly-roll or use in thumbprint cookies.

Wicked Good Blueberry Jam
A delicious berry-blue jam is made from fresh native blueberries from Monadnock Berries in Troy, New Hampshire, using our distinctive New England process. Regarding fruits, the deepest purple and blue colors often hint at the highest antioxidant power.

Blueberries have long been considered a "superfood" because of their high levels of antioxidant chemicals called flavonoids. Laurel Hill's Strawberry Jam was Top Pick of the five Strawberry Jams tasted as reported by NH Magazine, July, 2007. Made from local fruit, these strawberries contain Vitamin C. The jam has large and small chunks of fruit and has a sweet, fresh taste. My husband Jerry's favorite daily sandwich is Strawberry Jam and peanut butter.

The fruit jams & jellies and wine jellies are quintessentially New England, and are naturally gluten-free. Many of the ingredients used come directly from local Farmers’ markets, which are a great source for excellent quality local produce grown without the use of pesticides.

About the Founder
Founder of Laurel Hill Jams and Jellies, Sue Stretch has been making her jams and jellies since she was a young girl growing up outside of Boston. She remembers picking beach plums with her mother during outings to the Cape.

Sue has been perfecting her preserving techniques since the 50’s when she helped her mother make jellies and preserves. After she went off to college, began teaching, got married, and had two children, she took a hiatus. In the 80’s, she began jelling and jamming again. Living in the Okanagan Valley in Washington State on the border of British Columbia, her family was surrounded by an abundance of fresh fruits—apples, peaches, pears, cherries —and more. The women there taught her a simpler process, and she discovered the enthusiasm for home canning.

Now, after 41 years of teaching, she is retired from the classroom and pursuing her jam and jelly business.

Sue Stretch has lived in Massachusetts, New Hampshire, Wisconsin, Churchill and Winnipeg, Manitoba, Canada, and Washington State. Her husband, Jerry, is a retired Episcopal Priest. She has two married children and four grandchildren.

She is a member of www.nhmade.com and the NH Farmers' Market Association.

What's In the Name?
The name “Laurel Hill” originates from the area of Bedford where she lives—Birchwood Circle. Laurel Hill is named on the topographical map of Bedford. The magnificent evergreen flowering shrub “Mountain Laurel” with its light/pink to white flowers blossoms around June 15th and surrounds her home. All products are made at her Laurel Hill health-certified residential kitchen.

Jams or Jellies?
Jams and jellies share two things in common. They are each made with fruit (or wine) that is preserved with sugar and pectin, and they are all jellied or set to a greater or lesser degree.

Jellies are made from a clear liquid. The fruits (such as apples, crabapples, peaches, pears, grapes,) are steamed to make the clear juice, and then processed into a translucent spread.

Jams are made with the fruit in them. The fruits (such as strawberries) are crushed or chopped and cooked with sugar to create a preserve.

Wine jellies are simply wine, sugar, and pectin. Pectin is a water soluble substance that is found in the tissues of all fruits. Pectin is a natural thickening and jelling agent. It is what makes the jams and jellies jell.
