From the Chef: Jean-François’ love affair with PB&J began at the age of fourteen, when he spent several months in the United States as a foreign exchange student. One of the first American foods he tried was a peanut butter and jelly sandwich. In France, peanuts are only consumed with pastis, or small alcoholic beverages served before meals so he was relatively unfamiliar with the flavor. Jean-François enjoyed PB&J’s so much that when he returned to France he found a British supermarket that carried white bread so he could continue eating them at home.

Our 72% dark chocolate Hole Molé® bar blends the unique flavors of caramelized rice crispies, toasted almonds, and a blend of molé spices.

It only takes one bite to unlock the unique sequence of flavors and textures that ripple through our Hole Molé® bar. First comes the crunch as sweet caramelized rice crispies and savory toasted almonds merge with robust dark chocolate. Saucy suggestions of sesame rise and fall on the back end of the bite. Then finally, just before you can say, “That wasn’t very spicy,” in kicks the heat of four distinct chile peppers: ancho, casabel, mulato and pasilla.

From the Chef: Jean-François originally created the Holy Molé® bar for Tumbador’s® tasting tent at the Brooklyn Botanical Garden’s Annual Chile Pepper Fiesta. He decided to try a variation on molé sauce and finalized the recipe after extensive experimentation with chile pepper blends and ingredient ratios. Holy Molé® was so well received that Jean-François trademarked the bar and incorporated it into our signature Brooklyn Born Chocolate® line.

The Café Au Lait bar is a creamy combination of 35% white chocolate and stone ground Columbian coffee bean concentrate. Just half a bar contains enough caffeine to rival a 24oz cup of coffee, so it’s guaranteed to put the pep back in your step, anytime anywhere!

From the Chef: Jean-François chose Columbian coffee beans for this recipe because of their buttery, chocolaty flavor. Every batch of beans is stone ground for approximately fourteen hours, which liquefies them and gives the final bar it’s smooth grain-free texture.
