- NATURAL: No artificial additives, ever. No antibiotics, ever. No hormones, ever.
- HUMANELY RAISED: The hogs are certified humanely raised. They live a relatively carefree life (country club for pigs!). Their diet is all vegetarian.
- NO NITRATES: Artificial nitrites and nitrates are added to industrial cured pork products to A) enhance color, B) inhibit spoilage, and C) make you burp. Aux Délices des Bois use only naturally-occurring nitrates, found in sea salt and certain vegetables. As a result, coloring may vary from one batch to the next.
- CURED: Following tradition, Aux Délices des Bois' artisanal, slow curing methods produce rich aroma and taste. A whitish bloom sometimes forms - as with cheese, it's a natural part of the curing process.
