You’ve got some strange requests, but I finally made “Zin Wellington.”

It took me a lot of work to figure this recipe out, Dave. I hope you like it.

“What the heck is this?”

It’s ‘Zin Wellington.’ Just like you told me to make for dinner.

“Zin Wellington?”

Yeah. Zinfandel cooked in the style of Beef Wellington. I have to say, I had my doubts when I was wrapping the bottle in foie gras and puff pastry, but I bet the Zinfandel is going to really make the duxelles sing.

“Lisa, I meant you should buy that Wellington Vineyards Estate Zinfandel Vertical. It’s got a bottle of the 2005, 2006, and 2007.”

Oh.

“Yeah, I figured we both like a good Zin, and that vertical has THREE good Zins. The 2005? Cherry and raspberry on the nose. The 2006 throws in some blueberry and blackberry, with hints of brown sugar and cinnamon. And the 2007 has aromas of black currant!”

That sure seems like it would smell a lot better than a bottle of wine baked into foie gras and puff pastry.

“Yeah. I’m gonna go see if they’re still selling them.”

Tart cherry and raspberry aromas, with notes of briar, chocolate and roasted nuts.  Full, rich and viscous, yet dry with a slightly tart finish.  This wine is just now opening up, and has a lot of life left.
 
2006 Wellington Estate Zinfandel

  • 3.51 pH
  • 195 cases produced
Cherry, blueberry and blackberry fruit aromas, with brown sugar and cinnamon notes.  A rich entry, supple texture, full, dry, with a bit of firming tannin on the finish.  Quite enjoyable now, even without food, but has at least 3-5 more years of aging potential.
 
2007 Wellington Estate Zinfandel

Briar, black currant and blueberry aromas.  A very concentrated, viscous, slightly tart fore palate with a chewy texture and dusty tannins.  This one is still a baby, and has a lot of potential to develop more with extended aging.  Best now with food, and a good candidate for your Vinturi aerator and/or decanter.

Wellington Vineyards is owned Peter Wellington. Peters father John, purchased the winery site in 1986. At the time, it consisted of 20 acres of old vines and a few decrepit old fruit and nut trees. Replanting of part of the old vineyard and orchard started in 1988. The winery was completed in time for the 1989 crush. We grow approximately half the grapes we use and purchase the remainder, primarily from small, unique vineyards.
 
The estate vineyards consist of 21 acres, 8 of which are 85 to 117 years old. There are 24 different varieties in the old vineyard, with the most common being Zinfandel, Carignan, Alicante Bouschet, Grenache and Syrah. In addition, there are 10 acres of eleven to sixteen year old vines that consist of Merlot, Chardonnay, Marsanne, and Syrah. We grow more Merlot than anything else. Three more acres were replanted in 2001, predominantly to Syrah, Zinfandel and Grenache.
