Thrill of victory or the agony of defeat. Either way, you're gonna need a drink.

She milled nervously around the kitchen, trying to distract herself from the oven timer slowly ticking down second-by-second. In precisely 3 minutes and 21 seconds … 20 seconds … 19 seconds, she'd have her answer. Would it be the triumphant flavor of perfectly browned puffed pastry, or the chewy defeat of overcooked tenderloin? Only time would tell. Two minutes and 14 … 13 … 12 seconds to be precise.

She felt good about this one, yet she eyed the 2005 vintage hesitantly. Too soon to celebrate just yet. Too presumptuous. If things went well, she'd be savoring the cassis, mulberry and dark chocolate notes very soon. She'd fill her glass with the hints of licorice, orange peel, violets, cedar, vanilla and pepper and hoist it above her head triumphantly. But if she failed, well, she'd just have to stow away her handmade stainless steel corkscrew away and accept her defeat.

Mere seconds remained until the final outcome would be revealed … 7 … 6 … 5 … 4 … 3 … 2 … 1 … BEEEEEEEP.

She took a deep breath, slipped on her oven mitts and opened the door. She could tell immediately. It was a thing of beauty. Buttery and golden puff pastry. And when she sliced into it, medium rare. Perfection.

It was a Wellington Victory for the ages. Of beef and of wine.

2005 Wellington Victory 750ml
 
Wellington Vineyards only bottles a Reserve when they can make a blend which is markedly superior to any of their individual Cabernet or Merlot bottlings. 2005 is the sixth time in 17 years they decided to bottle Victory, and the first time they have bottled back-to-back vintages. It is the first time Petite Verdot is included in the blend.  There are so many things going on aromatically that you get something new at every sniff: cassis, mulberry, dark chocolate, licorice, orange peel, violets, cedar, vanilla, and pepper. In the mouth: smooth, supple entry, rich but never heavy, seamless transition to a firm, chewy yet not harsh finish that promises great things to come. Drink now only if you can’t resist. Cellaring will be duly rewarded.

Wellington arrived at the final blend only after multiple tasting of various proportions of their finest batches of Cabernet Sauvignon, Merlot and Petite Verdot. The 2005 Victory consists of 50% Handal-Denier Vineyard Cabernet Sauvignon, 20% Francisco Roberto Maestas Vineyard Cabernet Sauvignon, 20% J&J Vineyard Petite Verdot and 10% Estate Merlot. All this is fine and dandy, but what was the goal of all this blending, you might ask. The ideals were aromatic intensity and complexity and that elusive combination of power and finesse. A great wine should appeal to both the visceral and intellectual sides, providing pleasure on different levels, and wellington  believes this blend fulfills that role.

Wellington Vineyards is owned Peter Wellington. Peter's father John purchased the winery site in 1986. At the time, it consisted of 20 acres of old vines and a few decrepit old fruit and nut trees. Replanting of part of the old vineyard and orchard started in 1988. The winery was completed in time for the 1989 crush. We grow approximately half the grapes we use and purchase the remainder, primarily from small, unique vineyards.
 
The estate vineyards consist of 21 acres, 8 of which are 85 to 117 years old. There are 24 different varieties in the old vineyard, with the most common being Zinfandel, Carignan, Alicante Bouschet, Grenache and Syrah. In addition, there are 10 acres of eleven to sixteen year old vines that consist of Merlot, Chardonnay, Marsanne, and Syrah. We grow more Merlot than anything else. Three more acres were replanted in 2001, predominantly to Syrah, Zinfandel and Grenache.
