LEED Us Into Temptation
OK, you can’t literally taste sustainability. But we have to think that Torii Mor’s commitment to Earth-friendly grape cultivation reflects the conscientious way they make their wines – and there’s no doubt we can taste that.
Their solar-array, gravity-flow, LEED Gold-certified winery isn’t just a showpiece of environmental design. It’s also produces some fantastic Pinot Noirs. The 2007 Chehalem Mountains Select Pinot Noir and the 2007 Olalla Vineyard Pinot Noir were both fermented with indigenous yeast in small fermenters, and racked to a mixture of new and old French oak barrels. But they couldn’t be more different and still both be Pinots: the Chenhalem is dark, intense, and jammy, while the Olalla exudes sweet, floral, earthy notes. The Eola-Amity Hills splits the difference, with an herbal character bringing the floral and dark fruit elements together.
We’re all in favor of doing well by doing good, and Torii Mor certainly qualifies. But in our book they go one better: doing well by doing good and making good wine.

Torii Mor’s 2007 Olalla Vineyard Pinot noir has a sweet, floral-perfume aroma with a mix of fresh purple plums, caramel, vanilla and cherries, framed by an earthy note. The flavors show the same earthy note, with a mix of red and black cherries and caramel- oak notes. The wine has a good balance of acid and tannins. The texture shows sweetness, followed by a rich tannin structure that brings fullness to the long finish. This wine will benefit from a little more cellaring (until summer 2010), or decanted and aerated to soften up the tannins.
