The Booking

There's no party that can't be saved with a good power trio.

Hey, everybody enjoying the party? Yeah! All right! Keep swinging!

"Donald, come talk to me."

Byron, hey! What about that sweet trio I got for the entertainment! Exactly what you wanted, right?

"Donald, I wanted a music trio. Like, guitar and vocals and piano. Not that Tercero Santa Barbara County Trio you just set in front of a drum kit."

Byron, man! You're not seeing the big picture! Tell you want, as soon as that 2008 Cuvee Christie takes her solo, you'll see why I booked them.

"It's a bottle of wine, Donald. Wine can't sing."

Sing? Ha! That's funny, Byron, because the Cuvee's not the singer. The singer's the 2010 Tercero Viognier! He's a nice tenor, you're gonna love him.

"Donald, you said you had this taken care of months ago."

I swear, buddy! This is the hottest power trio of the YEAR! See that Sirah blend over there? That's "The Climb" and "The Climb" is NOT just going to appear at ANYONE'S birthday party. So relax, okay? I'm sure they're gonna start playing any second now.

"By which you mean you're going to plug in the boombox with a Styx cassettes you're holding behind your back."

What? Byron! I'm just holding this coincidentally!

"I gave you five grand to take care of this, Donald. FIVE GRAND."

Features

2010 Tercero Viognier, White Hawk Vineyard 750ml

This is Tercero's first Viognier release, and based on the results and the reactions others have given the wine, it certainly will not be their last! The 2010 Tercero Viognier White Hawk Vineyard has beautifully pure notes of white peaches and stone fruits, subtle flowers, honeycomb, and crème on the nose. This medium-bodied, balanced, pure white has solid texture as well as integrated acidity and a clean, long finish.  This would be a perfect seafood wine, with fresh or steamed shellfish at the top of the list.

2008 The Climb, Syrah/Petite Sirah Blend 750ml

Inky, opaque and ripe the 2008 Tercero The Climb is a blend of 67% Syrah and 33% Petite Sirah. It exhibits solid aromas of black fruits, plum, tarpaper, smoked earth, and meat on the nose and while slightly straight-forward, is beautifully fruited and possesses solid purity and intensity. Full-bodied on the palate, this concentrated, substantial red has loads of fruit, notable balance, good acids, and a downright drinkable profile. It should continue to shine for 5-8 years or more.

2008 Cuvee Christie GSM Blend, Santa Barbara County 750ml

The 2008 Tercero Cuvée Christie, a blend of 75% Grenache, 12.5% Syrah, and 12.5% Mourvedre, has a spicy profile with red currant and wild berry like fruits, underbrush, spice cabinet, earth, and wet stone like minerality all showing and developing on the nose. Medium-bodied on the palate and perhaps the lightest weight in the lineup, with an elegant texture, good balance, lots of acidity, and solid length, this food-friendly blend should continue to evolve positively for a year or two, and have 5-8 years of longevity.

2010 Tercero Viognier, White Hawk Vineyard 750ml

  • 100% Viognier from the White Hawk Vineyard
  • Harvested: September 24, 2010
  • Brix at Harvest: 24.1
  • Alcohol: 14.1%
  • pH: 3.45
  • TA: .64
  • Production: About 125 Cases

Fermentation: 1/3 Stainless Steel and 2/3 Neutral Oak Fermented and aged. The wine did not go through secondary fermentation.

Larry is not a big fan of most California viogniers for he finds them too rich and ‘fat’, as well as so floral and oftentimes sweet that they can be cloying and difficult to pair with food.  He therefore set out to make this wine in a food-friendly style. The grapes come from the White Hawk Vineyard, a vineyard just north of the city of Los Alamos in the Cat Canyon area that sits across the street from Melville Winery’s Verna’s Vineyard. It is planted on 100% sand, meaning the vines have to really work to find water. The grapes therefore are usually fully ripe at lower sugar levels and, more importantly, lower pH’s and higher acids than grapes from other vineyards in Santa Barbara County.

2008 The Climb, Syrah/Petite Sirah Blend 750ml

  • Varietal Composition:
    - 67% Syrah (Thompson and Larner Vineyards)
    - 33% Petite Sirah (Rodney's Vineyard)
  • Alcohol: 14.8%
  • pH: 3.75
  • TA: .61
  • Production: About 200 cases

Fermentation: Grapes were all fermented and aged separately and blended just before bottling. Aged in older French oak barrels for 22 months.

The second release of this wine and it’s really coming into its own as a unique blend. This time, the blend is 2/3 syrah and 1/3 petite sirah, with the syrah sourced from the Larner and Thompson vineyards and the petite from Rodney’s vineyard in Los Olivos. All components were kept separate and aged for 22 months in neutral 2-5 year old French oak barrels before being racked together for bottling.

2008 Cuvee Christie GSM Blend, Santa Barbara County 750ml

  • Varietal Composition:
    - 75% Grenache (Watch Hill and Camp 4 Vineyards)
    - 12.5% Syrah (Thompson and Larner Vineyards)
    - 12.5% Mourvedre (Camp 4 Vineyard)
  • Alcohol: 14.9%
  • pH: 3.7
  • TA: .58

Fermentation: Grapes were all fermented and aged separately and blended just before bottling. Aged in older French oak barrels for 22 months.

The third release of this wine and Larry Tercero's favorite to date. The aromas and flavors bring him directly to the South of France, and he digs it! The blend on this wine is 75% Grenache (from Camp 4 and Watch Hill Vineyards), 12.5% Syrah (Larner and Thompson Vineyards) and 12.5% Mourvedre (also from Camp 4). The result is a glass that truly screams from the bottle upon opening. It’s already become a wine club and tasting room favorite.

Tercero Wines

Owner:
Larry Schaffer and Christie MacDonald
Location:
Los Olivos, CA
The idea for Tercero wines surfaced a number of years back. Larry Schaffer had been in the educational and trade publishing industry for a number of years and had achieved all he had set out to do. It was time for a change . . . . but to what? Christie MacDonald, Larry’s wife, suggested wine . . . but not wine sales. She suggested that if one is to make a change, go big and all the way . . . She ‘gave her blessings’ to Larry to go back to school and achieve a second degree, this one in Viticulture and Enology. Now one must understand that there are only a few schools offering a degree like this, and none of them were within driving distance of where they currently lived . . . and top that off with the fact that they had two young children at the time (and a third coming along in the not so distant future)! Christie continued to suggest this concept, knowing that it would make for a challenging couple of years, but hopeful that the end would justify the mean.

Fast forward four years and Larry begins his new career in earnest as the Enologist for Fess Parker Winery, a well-respected winery in the Santa Ynez Valley. Why here? The winemaking community is willing and wanting to help each other, but more importantly, it is simply an incredible place to raise children!

Fast forward another year, and Larry and Christie are ready to ‘take the plunge’ and start buying grapes to make their own wines! It’s scary and challenging at the same time – no matter how much you read about it or do it for others, it’s quite different when it’s ‘your own baby.' But it’s also a way for Larry to ‘marry’ his past with his present – to use his sales/marketing skills along with his technical winemaking skills to see what he and Christie can produce.
