The homegrown American version of Austrian pumpkin seed oil, our roasted Pumpkin Seed Oil (RPSO) is 100% varietal oil made from oilseed pumpkins grown in New York. The oil has a deep emerald green color and flavors of toasted sesame and umami (a smoky, savory flavor like roasted mushrooms). It has a more complex profile than its Austrian cousin, Styrian pumpkin seed oil.
 
The oil makes a wonderful complement to grilled vegetables, roasted fish, or sautéed leafy greens. Try on fresh pasta or squash soup for a rich, distinctive alternative to olive oil.
 
RPSO is all-natural, expeller-pressed unrefined oil for finishing and flavoring your favorite dishes. It is 100% pure varietal oil made with non-GMO pumpkin seeds grown on a family farm in central New York.
 
Pumpkin seeds are roasted, pressed and bottled at our production kitchen in Geneva, New York.

Butternut Squash Seed Oil, 6.3 oz.
A flavorful, healthy and local alternative to European olive oil. Our company's first bottled oil, butternut squash seed oil (BSSO) debuted in the fall of 2008. With the help of food scientists at Cornell University, we discovered a delicious, all-natural oil locked up in squash seed that would otherwise be destined for compost. This oil is released by precise roasting and expeller pressing without the use of chemicals, excessive heat or harsh filtration. This gently processed oil contains no hydrogenated fats, chemical additives, or preservatives.
 
The oil contains only one ingredient: oil from roasted pressed varietal squash seeds. We produce the oil in small batches, ensuring a level of quality from seed to bottle to shelf.
 
The oil's nutty taste makes a great replacement for nuts in baked goods or stuffings for those with nut allergies.
 
Ingredient: 100% pure butternut squash seed oil, not a blend.
 
Flavor profile: warm, buttery, nutty taste reminiscent of cashew or peanut
 
Uses: sautéing, grilling,or roasting vegetables and meats, or as a flavoring oil on prepared dishes. Smoke point of 425 F.

For a limited time, we are offering oil pressed from silver edge squash seeds. Silver edge is a Native American heirloom that is grown for its large and tasty silver-edged seeds which are typically roasted for pepitas or used in pipian sauce--but we took it one step further and pressed the seeds to extract its delicious oil. This oil has a delicate flavor that complements soft cheeses, roasted vegetables, fish, and salads.
 
Silver Edge Squash Seed Oil is 100% non-GMO varietal oil made from the seeds of silver edge squash. Seeds are roasted and expeller pressed.
 
This oil is produced in very small quantities and has limited availability.

Stony Brook WholeHeartedFoods is one of America's only artisan makers of culinary oil--or to borrow the French term for oil-maker, a huilerie. We craft flavorful culinary seed oils by using locally grown squash seeds, roasting them in small batches, and pressing them into oil using a gentle expeller-press and filtration method that maintains freshness, subtle flavor and depth of color.
 
Stony Brook was founded in Geneva NY in 2008 by Greg Woodworth and Kelly Coughlin. In 2005, Woodworth and Coughlin decided to relocate their gourmet mail-order bakery business to the Finger Lakes region of New York, inspired by the rich agricultural resources and quality of life. In 2007, Woodworth was approached by a local farmer to incorporate squash oil into his baked goods. Tasting one spoonful, he recognized that with a few refinements, the oil had potential not as a hidden cookie ingredient but as an intriguing new culinary oil that would stand on its own.
 
Over the next several years, the team at Stony Brook honed its oil-making process. Stony Brook's farmer-partner, Martin Farms, provides seeds of several squash varieties from each year's harvest--like Butternut, Delicata and Kabocha squash--that are roasted in small batches and gently processed to maintain balance and complexity of flavor. The result is a selection of 100% unrefined varietal oils--subtle, distinctive and flavorful, not unlike those found in the fine Finger Lakes wines made nearby.
 
Today Stony Brook's squash seed oils sell at dozens of specialty food stores from Boston to Seattle, including Dean & Deluca, Union Market, Zingerman's Deli, and select Whole Foods stores. It has received favorable reviews by food editors of the New York Times, Boston Globe, and Wall Street Journal (see our reviews). Award-winning restaurants feature the oil on the menu—like those of chefs Ming Tsai, Jodi Adams and Sam Hayward. In 2011, Edible Finger Lakes magazine named Stony Brook "Local Hero Food Artisan."
