When WineDavid suggested we do a mystery case my mind went to the deepest, darkest corners of the cellar. And after nearly 90 years, that’s a deep, dark place!
As a family we tend to focus on current wines and we are giving you a nice selection of those, a couple bottles each of Sangiovese, Merlot, Zin, Cab, and the newest addition to the family, Cab Franc. A few will receive a bottle of our Wisdom Cabernet—our first real “reserve” Cabernet—something we’ve never offered to Wooters. But we always hold back a few cases of Cab from each vintage. These wines, never seeing thpe light of day, are allowed to age in perfect conditions. Wooters in the know always lay our wines down for a period before cracking them open. We’ve decided to give you a peak at what could happen if you lay down our cabs for say…10, 15, or 20 years. We’ll put a couple of those examples in the box too. We thought it would be fun to sign some of the bottles for posterity. So open the case in a private area. Rumor has it that paparazzi are following the delivery truck!
I’ve always said, higher acid, tighter structure allows for nice aging. This will give you an opportunity to judge for yourself. I’ll love to hear from you about your experience. Invite some friends, fix some food, pull some corks and enjoy life. It’s what we like to do, and love the opportunity to share that experience with you!
