All Mozzarella Company cheeses are handmade following centuries-old recipes, just like the cheeses used to be made in Europe.


Smoked Scamorza, 0.40 lb

Mild flavor with smooth, dense texture. Lightly smoked over pecan shells.

Ingredients: Pasteurized cow's milk, cultures, vegetable rennet, salt. Smoked over pecan shells.


Caciotta Ancho Chile, 0.50 lb

Caciotta cheese is a Texas version of Monterey Jack. Mellow and savory. Semi-soft texture, seasoned with Ancho Chile (mild).

Ingredients: Pasteurized cow's milk, cultures, ancho chiles, fresh cilantro, calf rennet powder, sodium chloride, rennet extract (chymosin, pepsin), and salt


Fresh Mozzarella, 0.50 lb

Fresh Mozzarella (cow's milk). soft and moist. Creamy. Smooth and elastic. Lightly salted.

Ingredients: Pasteurized cow's milk, cultures, vegetable rennet (rhizomucor miehei), and salt   


Fresh Goat Cheese with Herbs de Provence, 0.33 lb

Fresh Goat Cheese laced with fresh basil, tarragon and thyme. Hand-ladled. Lightly Salted.

Ingredients: Pasteurized goat's milk, cultures, vegetable rennet (rhizomucor miehei), herbs de provence (tarragon, chevril, savory, minced garlic, rosemanry, rubbed sage, marjoram, thyme, parsley, basil, and lavender), and salt


Rosemary Montasio, 0.40 lb

Bold and assertive with a nutty flavor. Firm texture. Aged 6 months to 1 year.

Ingredients: Pasteurized cow's milk, cultures, rosemary, calf rennet powder (sodium chloride, rennet extract (chymosin, pepsin)), kid lipase (lipase enzymes, salt and nonfat milk powder), and salt

  • Cheese should be stored in the refrigerator between 34 and 40 degrees Fahrenheit. The colder you store the cheese, the longer it stays fresh.
  • Cheese is most flavorful when served at room temperature, so unwrap the cheese and leave it out of the refrigerator for at least one hour before serving.
  • All cheese should be tightly rewrapped in fresh, clean plastic wrap after each use.
  • Dates found on our cheeses indicate the day we pasteurized the milk and made the cheese.
  • Generally, our perishable cheeses remain fresh for two to three weeks. Fresh mozzarella, goat cheese and mascarpone may be frozen so that they can be kept for longer periods. They should be defrosted slowly in the refrigerator prior to use.

Paula Lambert fell in love while she was on an extended visit to Perugia, Italy. She vowed to bring her new love — creamy, smooth, egg-shaped balls of fresh mozzarella cheese — with her when she returned home to Dallas. “The fresh mozzarella I loved and ate every day while I lived in Italy simply wasnʼt available at home,” Lambert says. “I founded The Mozzarella Company with one clear goal — to make the same fresh mozzarella I had enjoyed in Italy. I realized that in order to have this wonderful cheese in Texas I was going to have to make it myself.”

So first she learned to make mozzarella by hand from Mauro Brufani, who owned a cheese factory near Perugia, because “For me to even attempt to bring this special-yet-simple food to the U.S., I knew it would have to be as close to the real thing as possible,” she says. Under Brufaniʼs tutelage, Lambert became as enamored of the process as the product. Starting with fresh milk each morning, the mozzarella was ready to sell in the afternoon. Lambert felt this idea would catch on in her native Dallas, especially if she could capture and communicate the charm of Italian life and link it with the cheeseʼs unique, farm-fresh taste.
