Fruit for this blend was harvested on October 19th, 2010. Harvest analysis:
  • Brix: 23.0
  • pH: 3.4
  • TA: 6.7 g/L

The grapes were crushed leaving 30% whole berries. The must cold soaked for 2 days at 10o C and was inoculated with ICV-D254 wine yeast. The primary fermentation was in small 1 ton bins. Extraction was achieved via punchdowns numerous times daily until the desired level of extraction was achieved at which time it was pressed and racked to barrel. After completion of the primary fermentation VP41 and BETA ML bacteria were added to initiate MLF. The wine was racked minimally in the cellar and was bottled on June 19, 2012.

Here in the Ahtanum Valley, just west of Yakima, our ancestors chose the agrarian life, all the way back in 1897.  The simple joys of our rural community, and the products it bears, still speak to us today.
 
In 2004, the fifth generation of Gilberts began the work of producing true-to-varietal wines from our vineyards in Washington state. What we found out is that wine brings us closest to family and friends and the truth and beauty that we crave. We’d rather be on our patio, candles lit, with a great dinner and a bottle of wine than almost anywhere else. We are privileged to share that with you through our wines produced with great care from grapes grown on the Wahluke Slope, in the Horse Heaven Hills, and the Ahtanum Valley.
 
Besides making wine, we make our own fun, which involves throwing a party (or two) and inviting our favorite musicians and artists to share their talents with us.
 
Growing and creating products and experiences that matter is both our ends and our means. We believe that what we’re doing matters: we’re making an authentic product that comes from the place that we love.
