Terribly delicious, that is! What, you thought only scary things were in cellars? Hey, come on. That’s outdated Victorian thinking! Don’t go all Freud on us here, okay? The truth is, cellars are a place where people hide cool stuff like knives and ghosts and illegal beer. Why, even the pyramids were just big cellars, and they were full of gold and kings! When you hear cellar, don’t think about some repressed English fuddy-duddy trying to keep the world from having fun. Think about the Gilbert Cellars Mini-Vertical. It’s full of great tasting joy and we think you’re gonna love it.
There’s a 2010 Gilbert Cellars Syrah, Wahluke Slope. That’s right, Internet, we said Syrah. Enjoy the luxurious mouthfeel and you’ll be hiding in that cellar all day. "C’mon, tornadoes!" You say as you sprawl on the old couch with a good book.And what about the 2011 vintage? Aromas of fresh-baked cherry pie, blackberry jam, and macerated plum. Think that’s scary? Maybe if you’re some other wine company worrying about lost profits. But for most of us, the broodingly-seductive Syrah is a good memory waiting to happen. Just like a cellar.
Because that’s what a cellar is really for. It’s not a place to hide the bodies. It’s some extra space you can use for the things you really love. Your drum set, a ping-pong table, storage for your Gilbert Cellars wine. A cellar isn’t for fear. It’s for love.

This elegant Syrah is sourced from our family’s Doc Stewart Vineyard, nestled among our apple and cherry orchards. The sandy post-Missoula soils and ideal ripening conditions on this vineyard produce consistently lush and savory award-winning Syrah.
2011 Gilbert Cellars Syrah, Wahluke Slope 750ml 2-Pack
This Syrah sourced from our family’s Doc Stewart Vineyard on the Wahluke Slope exhibits the complexity, elegance, structure, and purity that have come to define the difficult 2011 vintage.
Rich aromas of fresh-baked cherry pie, blackberry jam, and macerated plum mingle with savory aromas of cured meat, black pepper, and toasted cinnamon to present a wine that is broodingly seductive with fleeting hints of complexity giving glimpses to the treat in store for those who wait. Like a boxer at a press conference, the wine is muscular but elegant in a well- tailored suit of fine tannins, subtle acidity, and forward but unobtrusive alcohol.

2010 Gilbert Cellars Syrah, Wahluke Slope 750ml 2-Pack
Fruit for this blend was harvested on October 8th, 2010. Harvest analysis was the following:
- Brix: 23.4
- pH: 3.32,
- TA: 7.5 g/L
The grapes were crushed leaving 50% whole berries. The must cold soaked for 2 days at 10o
C and was inoculated with ICV-D254 wine yeast. The primary fermentation was in small 1 ton bins. Extraction was achieved via hand punchdowns numerous times daily until the desired level of extraction was achieved at which time it was pressed and racked to barrel. After completion of the primary fermentation VP41 and BETA ML bacteria were added to initiate MLF. The wine was racked minimally in the cellar and was bottled on March 29th, 2012.

The grapes were crushed leaving ~75% whole berries. The must cold soaked for 3 days at 10o C and was inoculated with ICV-D254 wine yeast. The primary fermentation was in small 1 ton bins. Extraction was achieved via hand punchdowns numerous times daily until the desired level of extraction was achieved at which time it was pressed and racked to barrel. After completion of the primary fermentation VP41 and BETA ML bacteria were added to initiate MLF. The wine was racked minimally in the cellar and was bottled May 2013.

Here in the Ahtanum Valley, just west of Yakima, our ancestors chose the agrarian life, all the way back in 1897. The simple joys of our rural community, and the products it bears, still speak to us today.
In 2004, the fifth generation of Gilberts began the work of producing true-to-varietal wines from our vineyards in Washington state. What we found out is that wine brings us closest to family and friends and the truth and beauty that we crave. We’d rather be on our patio, candles lit, with a great dinner and a bottle of wine than almost anywhere else. We are privileged to share that with you through our wines produced with great care from grapes grown on the Wahluke Slope, in the Horse Heaven Hills, and the Ahtanum Valley.
Besides making wine, we make our own fun, which involves throwing a party (or two) and inviting our favorite musicians and artists to share their talents with us.
Growing and creating products and experiences that matter is both our ends and our means. We believe that what we’re doing matters: we’re making an authentic product that comes from the place that we love. In a time when everything comes from everywhere, our wines come from a place that isn’t anywhere else. Cheers!
