Sommelier:
There are some really incredible wines here. This is not going to be an easy decision. But in the end, I can only choose one.
Chardonnay:
He brings out things in me that I haven't been in touch with for a long time. Like my delicate notes of citrus, ripe Anjou pears and warm baked apples. When I'm with him, I feel like the most well-balanced wine in the world.
Bordeaux Blend:
You know, when you put this many wines together, the tannins come out. Everyone's trying to show what they have to offer. Like me, I have a long, clean finish and a natural fruit sweetness that resembles dark, robust cherries. If you don't like that, I don't care. I'm not here to make friends. I'm here to impress him.
Sommelier:
It's hard to get past all the other wines that came before. But ultimately, if you find the perfect wine, and you end up happy, it's all worth it. For the first time in my entire life, I feel like I have found a wine that I can love forever.
Chardonnay:
There's something I think you should know. There's one wine here whose notes aren't as crisp and clean around the other wines as they are around you.
Sauvignon Blanc:
You got me. I don't care about finding the perfect pairing. I just wanted to be on the internet. I can't help it if he fell in love with my lemon, lime zest, melon and minerality.
Sommelier:
Even though it didn't work out, I couldn't have gotten to where I am without that wine. So for that, I'm thankful. This experience really opened me up to trying new pairings, so I have no regrets. I'm glad I went through this. Who knows what wine the future will hold. Only time will tell.

Mendocino Chardonnay is becoming very popular, because of its aromatic tendencies and balance. This makes them more food friendly and suited to a broader array of pairings. Through a stainless steel fermentation and medium toast plus oak program that focused on complimenting the wine, rather than overpowering it, the result was bottled as a great food wine.

This wine was crafted with the old world in mind. Made with a similar blend to a classic Bordeaux, this wine is very European in style - elegant, soft and approachable. This wine spent 14 months in French Oak, 30% of which was new. Comprised of 65% Cabernet Sauvignon, 17% Cabernet Franc, 6% Malbec, 7% Petite Verdot, 5% Merlot.

This Sauvignon Blanc was harvested in the middle of the night, because the cooler temperatures lock in essential acidity and phenols that Envolve Winery desires in all their white wines. This wine was 100% stainless steel fermented to keep this wine bright, clean and lively on the palate. After spending 5 months on the lees to develop more flavorful nuances, they very gently filtered this wine being careful not to strip any of its natural qualities.
