Sommelier:
There are some really incredible wines here. This is not going to be an easy decision. But in the end, I can only choose one.

Chardonnay:
He brings out things in me that I haven't been in touch with for a long time. Like my delicate notes of citrus, ripe Anjou pears and warm baked apples. When I'm with him, I feel like the most well-balanced wine in the world.

Bordeaux Blend:
You know, when you put this many wines together, the tannins come out. Everyone's trying to show what they have to offer. Like me, I have a long, clean finish and a natural fruit sweetness that resembles dark, robust cherries. If you don't like that, I don't care. I'm not here to make friends. I'm here to impress him.

Sommelier:
It's hard to get past all the other wines that came before. But ultimately, if you find the perfect wine, and you end up happy, it's all worth it. For the first time in my entire life, I feel like I have found a wine that I can love forever.

Chardonnay:
There's something I think you should know. There's one wine here whose notes aren't as crisp and clean around the other wines as they are around you.

Sauvignon Blanc:
You got me. I don't care about finding the perfect pairing. I just wanted to be on the internet. I can't help it if he fell in love with my lemon, lime zest, melon and minerality.

Sommelier:
Even though it didn't work out, I couldn't have gotten to where I am without that wine. So for that, I'm thankful. This experience really opened me up to trying new pairings, so I have no regrets. I'm glad I went through this. Who knows what wine the future will hold. Only time will tell.

2010 Epilogue Red Blend, California Bordeaux Blend 750ml 2-Pack
 
This Red Wine is very approachable as it offers up very soft and silky tannins, with a long, clean finish. On the nose you get dark cherry, blackberry and hints of earth and spice. Upon entry, there’s a glorious, natural fruit sweetness that resembles dark, robust berries. A long, lingering finish with measured oak flavors make this a great food-pairing wine. Pairs perfectly with light Italian dishes and tomato- based sauces – chicken, fish, pork & marinara based pastas.

This crisp, clean certified organic Sauvignon Blanc comes from the famed Mendocino County. It offers up notes of lemon, lime zest, melon and minerality. Balanced from start to finish, this wine is perfect for a hot summer day as it refreshes the palate and finishes long and clean.

Mendocino Chardonnay is becoming very popular, because of its aromatic tendencies and balance. This makes them more food friendly and suited to a broader array of pairings. Through a stainless steel fermentation and medium toast plus oak program that focused on complimenting the wine, rather than overpowering it, the result was bottled as a great food wine.

This wine spent 14 months in French Oak, 30% of which was new. Comprised of 65% Cabernet Sauvignon, 17% Cabernet Franc, 6% Malbec, 7% Petite Verdot, 5% Merlot.

This Sauvignon Blanc was harvested in the middle of the night, because the cooler temperatures lock in essential acidity and phenols that Envolve Winery desires in all their white wines. This wine was 100% stainless steel fermented to keep this wine bright, clean and lively on the palate. After spending 5 months on the lees to develop more flavorful nuances, they very gently filtered this wine being careful not to strip any of its natural qualities.

Childhood friends, Mike Benziger and Ben Flajnik, established their wine brand as a means to put a long time dream to rest; start a wine brand together that celebrates organic and biodynamic wines and their hometown of Sonoma….and have fun doing it.
 
Our Evolution to Envolve
 
In 2012, our wines continued to score well with publications and garnered notoriety with local Sonoma restaurants, wine critics and consumers nationwide. Around the same time our childhood friend, Danny Fay was finishing up his wine MBA in Bordeaux. As we grew, we realized the addition of another great friend would be a perfect fit, so we invited Danny to partner with us. Since then, we’ve become much more envolved in the wine industry, launching a second brand, Epilogue®, and committing ourselves full time to producing quality wines in different price points, suiting different lifestyles.
 
The added “N” also represents the phonetic spelling of Involve.  The Envolve wine brands seek to involve the consumer----the wine lover---- in all aspects of the wine making process, Sonoma lifestyle and the Envolve story. We’re using QR Codes on the back of our labels, videos on our Facebook and Twitter feeds and will be hosting educational seminars around the nation to educate people about wine and get them more envolved.
 
Finally, the “N” also represents our commitment to Nature. Envolve Wines portfolio encompasses sustainable, organic or biodynamic vineyards from Sonoma County. These practices not only provide healthier vineyards, but healthy vines, and in turn more robust flavors and energy from their fruit.
