So, Don Syrah… I know you said I shouldn't bet against the Dubost Syrah Trifecta, but I swear! I never thought that three 750ml wines could pay off like these did! That's why I'm here, on the day of your daughter's wedding, to beg you… for a glass.

It's true, you don't have to do it. And neither do those two big guys on either side of you, or the one behind the door, or the two outside, or that guy with a violin case. Are we gonna have some light entertainment? Because it would probably make me less nervous if I were able to enjoy… oh, I see, that's not a violin case per se. Well, Don Syrah, you do get points for sticking to a classic. But that's why I bet against the Dubost Syrah Trifecta! Because I figured three wines from 2007/2008 couldn't possibly be worthwhile! And, Don Syrah, I know my mistake means nothing to you, but I'm hoping- praying -you'll let this one ride once you hear my explanation.

See, I knew the 2008 Paso Robles was from the "neighborhood" so I figured that was a winner. Woody and rustic, subdued fruit and smoky bacon, how could that miss, right? But the 2008 Colson Canyon, I thought that would be a rookie wine. I figured it wouldn't pull its weight. Shows what I know, right Don? Oh, sorry, I didn't mean to punch your shoulder like that. No disrespect.

Anyway, that 2008 Colson Canyon turned out to be rich, dark and ripe with a finish of vanilla and smoke. It ages gracefully, and how was I supposed to plan for that? And the 2007 Ogorsolka Vineyard? With the subtle layers of cola, mushroom, black peppercorn, and bright fruit? Mama Mia! Is that what you say? See, I'm Scots-Irish so I only really know what I hear at the movies. Like Leprechaun XIX: Italian Bummer. Did you ever see that? Boy, what a terrible movie! I bet that director was so embarrassed when he… oh, that WAS your son? Well, as I was going to say, I bet he was embarrassed he got so many awards! Didn't that win a few awards? No? Because I would'a bet that…

2008 Syrah, Paso Robles 750ml

From Dubost Ranch's “neighborhood” comes a blend of 40% estate and 60% Starr Ranch fruit. A woody, rustic wine with subdued fruit and pronounced smoky bacon flavors. Well-structured with lingering tannins and a soft finish.

2008 Syrah, Colson Canyon 750ml

Colson Canyon Vineyard is a small vineyard in the hills above Santa Maria, known for producing high quality Syrah. Exhibiting notes of vanilla, leather and maple bacon on the nose this wine follows through with rich, exuberant flavors of dark ripe fruit. A plush layered mouth feel gives way to a finish touched with vanilla and smoke. Big, yet balanced, this wine will age gracefully for years to come.

2007 Syrah, Ogorsolka Vineyard 750ml

Showcasing a sense of place and style from the terroir of the Templeton Gap. The bright fruit is ushered in with subtle layers of bread, cola, mushroom, black peppercorn, floral and vanilla flavors each intertwined with the next. Drink now or enjoy for years to come.

Family-owned and operated, we are dedicated to the production of premium, limited quantity wines handcrafted from grapes grown locally and in our own vineyards.  Our straw bale winery and tasting room is situated on the Dubost Ranch in the historic Adelaida area west of Paso Robles, California.
 
The Dubost Family left the Cherbourg region of France after the Franco-Prussian War of 1871 to escape the violence of Europe. They were blacksmiths by trade and immigrated to Hawaii and the Black Hills of South Dakota before settling on the Central California Coast.
 
Adelaida at that time was a populous area with many miners and homesteaders and the Dubosts operated a General Store, Post Office and Dance Hall to serve the neighborhood. Alexandrine was the post mistress for many years and her son Raymond farmed the ranch for over 90 years operating the local telephone company until 1960. There is an historical marker at the site of the old store and post office commemorating the town of Adelaida and the role played by the Dubost family.
 
The vineyards and winery are on 320 acres of hillsides in the heart of Adelaida. The climate and limestone soils are perfect for producing premium grapes and the straw bale winery is a model for sustainable production facility.
