Wild Boar Handcrafted Italian Salami, 5.5 oz 2-Pack
Wild Boar salami is a mixture of field harvested Texas wild boar and all natural pork belly, seasoned with cloves and juniper berries for a robust yet sweet flavor. Creminelli’s Wild Boar Salami was selected as a finalist for Outstanding Meat in 2010 and has been featured in national media such as Wine Spectator, the San Francisco Chronicle and Tasting Table.

Wild boar meat is leaner, tangier, and deeper in color making a more exotic product. The flavor profile is stronger and more distinctive and takes on the tones of the boar’s wild diet which includes roots, grasses, nuts, and berries.  Creminelli’s wild boar salami pairs well with fresh figs, dates, walnuts, pistachios, rosemary bread, fried polenta, potatoes and spinach boiled and butter-fried, and Pecorino Toscano, Toma & Brá cheeses.

Campania salami features five different types of chili peppers and peppercorns as well as smoked sea salt, for a complex, well-rounded heat that never overwhelms the all-natural heritage Duroc pork. The unique and balanced flavor earned Campania the 2013 Sofi Gold Award.

Campania salami takes a cue from the fiery and smoky southern Italian region of the same name. The ancient city of Naples and the surrounding region is known for food inflected with red chili peppers and its volcanic activity. During the hot season, chili peppers helped to preserve the salami and past artisans would also preserve the meat beneath a layer of volcanic ash. Creminelli’s modern take is excellent with fresh cheese like mozzarella di buffalo, fior di latte, and burrata.
