DOs and DON’Ts for a terrific salad!

DO USE PLANTS. most salads are composed of plants. aim for a 65 percent minimum.

DO CONSIDER FLAVOR. salads need flavor. find plants with flavor.

DON’T DRESS IT WITH FROSTING. the only redeeming thing about salad is its relative healthiness. as ronald reagan once said, “salad puts the sal in salubriousness.”

DO USE A FORK. you must use a fork. you must only use a fork. a fork is the thing you must use. other utensils are fine, too.

DON’T TALK TO IT IN PUBLIC. people will think you are unwell.

DO CHEW BEFORE YOU SWALLOW. it is very difficult to eat salad the other way around.

DON’T EAT IT IN THE BATHTUB. don’t eat salad in the bathtub.

DON’T DROP IT IN THE LARGE HADRON COLLIDER. you could reverse time and kill us all.

Cavedoni Saba, 100ml
It is not only Lambrusco wine and the famous balsamic vinegar which is obtained from the grapes in the territory of Modena, but also another characteristic product of the local country cuisine, la saba. It is a very old speciality. Saba is obtained from careful cooking of the pressing of the grapes for many hours, until a concentrated must has been archeived.  The result is a dense, sweet syrup. During preparation saba is enriched with the addition of quince fruit (apple or pear) and aromatized with spices such as cinnamon and cloves. The fantasy of the cultivators of a cuisine with a long past, open to new and exciting combinations cannot do other than be stimulated by a product such as Cavedoni saba, which is genuine, of great quality and fruit of love, knowledge and respect for the ancient local and familiar customs.
Produced from 50% concentrated grape must. Produced with wine vinegar and must coming from the private vineyards of the Cavedoni family.  Product entirely handmade.
 
Cavedoni Aceto Al Tartufo, 100ml
A dressing with an intense perfume. Medium acidity, aged in oak barrels. Flavored by infusion with black truffles. To be used in the same way as fresh truffles.
 
Produced from acetified, concentrated grape must.  Produced with wine vinegar and must coming from the private vineyards of the Cavedoni family. Product entirely handmade.
 
Cavedoni Bianco, 100ml
Sweet and thick white vinegar made from Trebbiano cooked grape must. Good with fish and salad.  Product entirely handmade.
Cavedoni Delizia, 100ml
A delicious balsamic vinegar, "Aceto Balsamico di Modena IGP", made from cooked grape must. Good to drizzle over pizza, pasta, and salads.  Product entirely handmade.

Acetaia is an Italian word that does not have a direct translation in English. It means a facility that makes vinegar, so an antica acetaia is a very old vinegar producer, and Cavedoni is very old indeed. In fact, the Cavedoni family established their artisanal acetaia five generations ago in 1860 just south of Modena, Italy. One of the oldest balsamic producing facilities in the world, Cavedoni has the very oldest aging cellars in Modena where all great balsamic vinegars are produced. Palo Cavedoni continues his family’s tradition making his exquisite vinegars completely in the old method, aging the vinegar in old barrels of different types of wood, including oak, chestnut, cherry and juniper. Most importantly, Cavedoni’s balsamics are completely natural, with no adulteration from additives such as caramel or sugar. The resulting taste and sweetness is complex and natural with a perfect viscosity.
