Brix Chocolate Collection Set
 
This all-new collection Set features four individually wrapped 4 oz bars of each variety of Brix Chocolate. Each set includes a complete wine and chocolate tasting guide. Gluten free and Kosher certified.
 
Milk Chocolate:  46% Cacao.  Soft, creamy cacao perfectly compliments the lighter reds and sweeter dessert wines. Suggested Wine Pairings:  Port, Sherry, Rose, Burgundy.
 
Medium Dark Chocolate:  60% Cacao. While its cocoa content is high, it remains sedate enough to enhance the fruit forward wines it was designed to accompany making it the most versatile. Its suggested pairings are on the label but don't be fooled - it easily stretches upward to the lighter cabs and downward to the heavier pinots Suggested wine pairings:  Merlot, Syrah, Zinfandel, Chianti, Rhone.
 
Smooth Dark Chocolate:  54% Cacao. Rich chocolate, soft enough to pair with sweet or sparkling whites and medium bodied reds.  Suggested wine pairings:  Champagne, Riesling, Pinot Noir, Vintage Port.
 

Extra Dark Chocolate:  70% Cacao.  Specifically formulated to pair with the deepest red wines, it has a very high cocoa content and can stand up to the massive tannins found in these wines.  Suggested wine pairings:  Cabernet Sauvignon, Bordeaux, Barolo.

Dr. Nick Proia, an Ohio pulmonologist, developed Brix when it became obvious to him that no chocolate on the market paired well with wine. Nick and his colleagues would get together monthly to share a few great bottles and friends would usually bring an appropriate cheese to enjoy with their favorite red. It seemed foolish to Dr. Proia to eat these fat-laden cheeses after dinner, while trying to benefit from the health effects of wines.
 
Instead, Dr. Proia decided to try out the pairing of dark chocolate with wine and after trying all different varieties and "strengths,” he could find no happy medium. Either the chocolate was too much like eating candy or it was so bitter and complex that it would dominate a fine wine.
 
After a good deal of trial and error, Dr. Proia crafted the three blends of what would later be called Brix – the first chocolate specifically blended to compliment wine. At their root is single origin Ghanaian chocolate, known for its red fruit tones, mixed with the highest quality confectionary chocolate. The result is a blend so pure in flavor that it actually enhances those nuances found in great wines, without confusing the palate.
