The truth is, cellars are where people hide cool stuff like knives and ghosts and illegal beer. Why, even the pyramids were just big cellars, and they were full of gold and kings! When you hear "cellar," don’t think about some repressed English fuddy-duddy trying to keep the world from having fun. Think about Apex Cellars. Think about the 2009 Cabernet Sauvignon and the 2010 Merlot. Think those are scary? Maybe if you’re some other wine company worrying about lost profits! But for most of us, this wine is a good memory waiting to happen. Just like a cellar.

Dark, opaque ruby colored core with a garnet rim, the 2009 Apex Cabernet is rich, dense and structured.  Intense aromas of vanilla-accented blackberry, cassis and dark cherry reduction mingle with nuances of fresh garden soil, licorice spice and black olive.  Though aged in 50% new French oak, the wood is supported by ripe, dark fruit that fills the mid-palate and extends well into the finish.  The tannins are sweet and polished with a slight grip on the finish, indicating its youth. This wine should drink well into 2020.
 
Vintage:  Bud break was a bit later than normal for the 2009 vintage. However, due to a long, hot summer, the grapes had plenty of hang time and experienced an accelerated growth.  Harvest began early and was completed quicker than normal.  The shorter harvest was a blessing as most vines were not affected by the October 10th frost because picking was already complete.  The 2009 wines promise great color, balanced acidity and well developed fruit flavors.

Rich, ruby colored Merlot, the 2010 is full-bodied and bright, showing off its focused fruit backed by warm and toasty oak influenced aromas of grilled bread and toasted herbs.  Dark cherry, blackberry and wet stone are met by toasted grain, licorice spice and vanilla cream.  Big and generous with balanced acidity and silky, integrated tannins this wine is a knockout and should age well for 5-8 years.

Vintage: Outstanding vintage for Merlot on the hotter sites, as the cooler year allowed for more flavor/color development and acid retention.  The 2010 wines promise great color, balanced acidity and well developed fruit flavors.
