I work in a restaurant that has about 100 wines on our list. I can competently describe about 60-70 of them of them. When I am fumbling for something to say about a wine I am less familiar with, I say it is "balanced".

I like "drinkable". It has to be delivered in a dry tone of voice with a hint of boredom to indicate the supreme understatement. As in "Yes, that 45 Petrus was drinkable".
