I would be flying solo that night. Hubby will be playing drums in Milwaukee that weekend with all his midwest RUSH geeks - I mean friends.

I think I can safely move into the "yes" column! The only reason I wouldn't make it would be if I somehow get stuck at work late, and that would be very last minute, and highly unlikely.

I put a message on the pub page asking them to update the gatherings list. Chicago was still linking to the cancelled September 22nd shindig.

I'm supposed to be meeting friends that night but they are starting to waiver on the day. I probably won't know for sure until tomorrow night, but best guess is I will be attending.

How is your wife feeling this morning? I would hate to have the flu or cold and then have to clean up after a party.

It's pretty easy, especially if you make the onions and tomatoes ahead of time. I'm going to try freezing them in batches for quick tart assembly when I need them. This recipe makes two tarts.
BTW Your dolmades were killer.
Galette with Onion Confit, Tomato, Olives and Feta Cheese
• 2 Refr. Pie crust (comes in rolls) or use a pie Dough Recipe
• 4 medium onions, sliced thinly
• 2 cups chopped Plum tomatoes (I used a variety of the sweet baby tomatoes like grape or 100's)
• 4-5 ripie tomatos sliced 1/4"
• 2 cloves garlic
• ½ cup Niçoise or kalamata olives, pitted
• 4 oz. feta crumbled
• 1 bunch of fresh thyme
• 1 egg
• Olive oil
• Salt
Make the onion confit: Place the onions in a wide-bottom saucepan with two tablespoons of olive oil, two sprigs of thyme and salt to taste. Place the pan over medium heat and cook covered until onions are wilted and stewing in their own juices. Remove the lid and continue cooking until dark in color. Reserve.
Make the tomato mixture: Place a saucepan over medium heat, add two tablespoons of olive oil and the garlic and cook to soften. Add the chopped tomato, two thyme sprigs and salt to taste and cook until it reaches a thick sauce-like consistency, stirring occasionally. let cool a bit.
Assemble and bake the galette: Preheat oven to 400° F. To assemble, open up packages crust or if home made - remove the pastry from the refrigerator and roll out on a lightly floured surface into a 8-inch to 9-inch disk. Repeat with the other dough. Place on a sheet pan lined with parchment paper and trim off the ragged edges to form a circle. Divide the onion confit between the two disks. Spread to an even layer, leaving a 2-inch border all the way around. Top with spoonfuls of the tomato mixture, crumbles feta, top with tomato slices the olives. Fold the edges of the dough over to partially cover the filling. Brush the outside of the pastry with the beaten egg. Place in the middle of the preheated oven and bake for 30 to 35 minutes, until pastry is golden brown. Remove from the oven and transfer to resting rack to cool. Cut into wedges and serve.

So you think, you have some crazy friends!
You should make a list of the wines your friends were using for the obstacle course.
