Hey late-nighter! We made 1,200 cases of the Sauv Blanc...small amount left and it's pool-time white wine season! Great acidity on this so it will drink for another year, but don't think it will last that long in any of my friends fridges ;o)

Sweet...good to hear! The SB rocks, just some people don't "get" why we released late. But any snobs can go "F" it...good everyday wine is needed and this is just that! Have you ever had a "corked" bottle of wine? Crap... 1) not worth my money worrying about the wine holding up 2) it's more cost effective 3) everyone needs a SCREW...hence Toolbox. Fit our marketing and all the above. Also this isn't a "romantic" wine you'll be taking to a Michilin-Star dinner, so no need for romanticism...just drink the stuff and enjoy summer!

Would love to pop for this as I love a good SB, but as with about half the vintners on here you don't ship to Tennessee. It really seems so crazy because my house is about one mile from the North Carolina border, and a mile and a half from the Georgia and you ship to both of them. I know this question is sort of answered in the winewoot FAQ, but I live in Texas and am wary of ordering wine now since next week is supposed to be close to 100 degrees. Any specifics from the winery about how you'll be shipping to avoid heat damage?

I hope wineries double check the laws. Ours changed a couple of years ago and now we can have wine shipped to TN. Unfortunately, where I am in the state, it would be at least an hour drive to pick it up across a border, and I was going to buy this Woot until I saw this post.

I was drinking a '07 Leon Beyer Gewürz (Alsace) tonight - apples, melon, pineapple, honey, juice running down your arm with a gorgeous deep gold hue - so I appreciate a white with some age on it.

I'm always seeking to learn and I am curious about what it was about this wine that lead you to decide to hold it for 3+ years before release (I guess I am taking a leap from your comment that it was recently released in 2012)? Also, did it spend most of that time in the tanks/vats/barrels or whatever you call your stainless steel cans :-) or was some of that time in the bottle? Can you describe the evolution over that time...lit's not often that we run across a SB with some time on it and I am intensely curios how this one has evolved...or maybe since you compared it with a Sancerre, perhaps we should go snobby and talk about the elevage??

I generally do not drink whites, but the Toolbox 2007 Merlot I recently gambled on was incredibly good so I'll give this a shot. Granted, I still have a bottle and a half left, but I've only had it 5 weeks--can't drink it all at once. Yes, half a bottle was opened a few days ago, still has time left.

Also, I've had a few corked wines that were so horrible I had to run to the local wal-mart to get a boxed wine to wash away the taste. (okay, not really; but you get my point) Being corked doesn't qualify a bottle as good. So why should being screwed be bad?

Given a choice on the shelf I'll always grab the screw top bottle. Less fuss with a silly screw.

And no corked wine. That's nasty stuff and pretty much ruins the evening for me. You'll now find twist offs in any price range including $$$ imports.

A while back one of the foreign wineries commented during the wine dot woot sale that they only used corks on wine intended for the USA super market trade.

Just as another Wooter said, I suggest you ship to a FedEx store or location just over the border. I've broken many rules in my life, but some of the BS wine rules out there aren't worth busting and loosing my wine license. Hopefully you can just send in close proximity to your location over the border!

What is this vommiting unicorn? Any who..dry, not sweet. We picked a bit earlier than usual and the area we sourced from is very cool and damp in the mornings. Honestly very similar in style to a Sancerre. Mineralistic, grassy but nice hints of stone fruit. It's not an overwhelming Sauv Blanc like many of them out there that are "in your face" with powerful fruit. This is dry but elegegant just like those from Loire Valley. Easy to drink....one or two!

While I am not the winery, I have ordered a crap ton of wine from woot during the hot months with reckless abandon and never received cooked wine. I live in Tucson, AZ which gets pretty hot, but I just have the wine held for pickup at a FedEx location.

Well said, well said! There was a great amount of acidity in this wine, in a good way. And frankly we could have released it earlier but I prefer letting some of that "fuzz" mellow out a bit.

In regards to the fruit/nuanices itself: We did pick it a bit earlier, but the natural "habitat" was very cool and damp,so the fruit took on to its location. The vineyards were quite granite/rock based and with the wet mornings they soaked it in...just like those big reds that have eucyliptis (sp?) trees growing around them tend to soak in those characteristics.
I think we just felt that the wine had such good balance and was holding up so great that we'd let it mellow out a bit and it did. More well rounded now. The acidity held up like we thought. The wine was purley stainless steel fermented and aged for 8 months - no oak. Then bottled and held....we released it late last year. I think it could hold up for another year quite honestly. I am just a huge fan of steely, ocean-dune, mineralistic, "dirty" in a good way SB's - not in your face fruit forward Sauv Blancs. Don't get me wrong, there is great fruit there, but it's not over powering like some vintners get...hope that helps!
