Naturally occuring nitrites can turn into nitrosamines, a family of carcinogens, in the same way that industrially produced nitrites can. The reason being, sodium nitrite is sodium nitrite, regardless of its source. Unless a "natural" product contains a significantly lower concentration of nitrites (unlikely, since it still has to be properly cured), there is no health benefit from eating it.

"Normal" cured products containing industrially produced nitrites can be healthier, in this respect, because other compounds (sodium ascorbate, sodium erythorbate, etc) which inhibit nitrosamine formation are frequently added as preservatives.

I still think "all natural" is important. I usually buy hormone free meats and milk. A good portion of my produce is organic. This is just one area where I think people should know the truth - natural isn't always better.

Edit: I'd like to add that this isn't meant as an attack on Transatlantic Foods. I just think some people associate nitrites with "bad" and assume if it is labeled as "nitrite free" it is safer to eat. The fact is if you are going to buy these, buy them because they're tasty! (at least they sound so)

You had my heart at sausage. Haven't had this particular brand, but I've the same or similar varieties before. Personally, I love a good sopressata with fat that melts in your mouth - not the chewy stuff you find in some cheaper grocery chain brand. The Hot and Regular Sopressatas look good as does the Chorizo..and throw in the 8oz Pancetta on top of that? I'm in for 1. Looking forward to trying that salami with some of the good juice I've picked up this last year. Done!

We have some of these right now, and ate the Sopressata this last weekend with friends. Served with the last of my Vella cheese from my Jan wine woot order, of course..
Anyway, it was unreal good. Melt in your mouth cured meat as noted, this is the real deal.
Mine was scored from another site for almost 2 bucks a stick more, so this is also a real deal in that respect as well.

We happen to have a good source for organic/humanely raised cured meat products, so we're going to pass.

BUT - a note about sopressata: marinate some big shrimp; fold a thin slice of mozzarella and a slice of sopressata over each shrimp, sort of like a taco; skewer these little one-shrimp meat tacos and grill them.

(And yes - if you don't have a close-by, reliable source for cured meats, this is a good deal, in my opinion.)
