Just so you know this doesn't taste like any other jack I have had, because it has been dry aged the outside is firmer and almost has a parmigiano reggiano flavor while the inside is like an aged white cheddar.

That's when I first purchased this cheese, and it's excellent! I still have some left that has been kept vacuum sealed, and it's still as tasty as the day I opened it. I would definitely recommend.

Aged cheese of any kind brings out a completely different flavor and texture. This is quite the bargain, considering plain ol' store-bought loaf of Tillamook on sale is about $10. I am guessing this item is several notches (nachos? ;-) above garden variety.

Question: are wedges vacuum sealed? Sending this to relatives.

I LOVE THIS CHEESE. I served it at our Super Bowl party and had tons of questions about what kind of cheese it was and where I got it. It's awesome diced up on salads, too.

I don't think it really needs to be refrigerated before opening as long as it's not exposed to extreme heat. It's shipped via SmartPost, that's worth 2 weeks in the foyer right there!

This is a great cheese, especially paired with a nice spicy fruit forward Zinfandel.

I bought a small package of this about two and half years ago. It was int he back of the fridge until a month ago when i finally decided to open it. It was still great, but it was in the original shrink wrapped package. I still have some left and it is in great shape after being opened for a month.

I picked up some truffle butter around Thanksgiving and gifted a few of the packs. I told a co-worker how wonderful it was and now she wants some as well. I have definitely been waiting for it to make a reappearance so I could stock back up and also make a few friends very happy.

It's two pounds. With shipping on one that's only $12.50 a pound, which is a decent price for quality cheese (twice the price of Kraft Colby).
