What exactly is the fascination with fennel? Just because something is now trendy does not make it good. It seems like every time you go to a decent restaurant they're touting the awesome taste of fennel. Fennel is not awesome. If I wanted to eat something that tastes like licorice I would eat some licorice.

sausages and pepperoni are laden with fennel (and have been for centuries) and do not taste like licorice. i agree that fennel does not belong in everything, but when it is used well, it really enhances meaty flavors...

For me, the presence of sodium phosphate, sodium erythorbate, and sodium nitrate takes it out of the "gourmet" category. Apparently wine.woot offers both gourmet and non-gourmet items.

Which is why I read the label before purchasing. I do not enjoy any amount of fennel in my food. Seriously though, this stuff is everywhere now and it's like someone has discovered a beautiful new type of gem and everyone has to have it. Mark my words, cinnamon will be next.

I am not a fan of anise-flavored stuff in general, but you are right that there are places for it. I love Italian sausage, and it is the fennel that defines it.

Tarragon also has that anise flavor I don't like, but I adore Bearnaise, and my mother's chicken salad wouldn't he the same without it. It all depends on how much is used and what it's used with.

yeah, we all have flavors that we dislike; for example, i think oregano is nearly always overdone, and when i cook at home, i substitute marjoram because it's less potent. and i also am not a big fan of tarragon, though, like you, i do enjoy it in bearnaise.
