edit: that or I need a much larger discretionary income
I'd break it the first time I used it. No thank you.

Like moving forever? If its one night there's Johnny's Cafe, Piccolo Petes or if you want to spend more and go somewhere form MvF Nation, The Drover. Though Piccolo's was also on that Show that HAK's friend hosted (though they lost, I was SHOCKED).
Anyway, one night, I'd choose Piccolo Pete's The only viable answer to the question: What kind of potato is Hashbrown. Really, while there may be other options, that's the only one that makes sense. Unless you hate butter and crispy fried potatoes. The Strip is the steak I'd get.
Johnnys has been in business since 1922. Petes since 1933. This should tell you something about both places. If you go to Pete's and it's crazy busy Cascio's is close by and is also VERY good. They're kinda young though, only been around since 1944.
My father in law is friends with every one of these guys.
If your boss is some kind of commie bastard and doesn't want to eat a steak in the town that invented it, Lo Sole Mio is the only option for Italian. Le Voltaire was amazing, but its French. He'll have French options in Denver. But if he likes French Country food, it's very very good. Get the Brie Josette (Baked brie, served with an apricot-cranberries chutney) for an appetizer.
All of these are not that hard to get to from the airport. Drover is furthest and my last choice of all the ones mentioned.
If some starving pilgrim at the airport gives him a steakhouse rec that isn't one of the aforementioned tell your boss to punch them in the face.
Edit: I should mention that if they choose Le Voltaire don't trust the menu. They had recently changed it when I went and its different than the website. Some stuff is there, others aren't. Tell your boss to decide and I'll tell them whats best.

Thunderhead Brewery is in Kearney, Nebraska, just west of Omaha by a couple of miles. It is only about a mile off the highway and a good lunch stop en route to Denver. Bowtie sent us that direction. Some tasty beer.

I just attended a Riedel tasting and Maximilian Riedel demonstrated both the Eve and Mamba decanters. It truly does double decant because you add more air as you rotate the decanter to pour. It was very interesting to see. Of course, even with the discount for the night, I couldn't bring myself to buy one.

I keep coming back to the question of how do you clean the thing?

This is what all docs should do. If they can't show up on time, screw em. You're busy, the other patients are busy, make em wait.
I also have little patience for doctors that are running more than 10 minutes behind and don't have a nurse or other staff member inform you. I recently had words with an endocrinologist about how she thought it was appropriate to make me wait for an hour and 15 minutes after my scheduled appointment. I informed her that I understand that she was running behind and sometimes things come up or take longer than expected, but the professional thing to do is send someone around explaining that you are running behind and would we care to wait or reschedule. She didn't like me. I didn't like her. She's not our doctor anymore. My wife told me to be glad I only had to wait that long, she routinely waits 2 hours. Sorry, that doesn't work for me.
Of course me telling her to stop talking and do the job I'm paying for instead of wasting more of my time didn't help her like me more.

But other Doc's ? I hate being brought to the freezing exam room, have to put on the lovely paper gown and then freeze and wait for 30+ min?!! nope not for me!!
I really love my primary care dude for one simple reason. He comes in first, talks to me like a person in my clothes. Then has me change. One of his temp nurses had me change first one time and he was not pleased at all by this.
