Just started my wine class last night - series of seven, two-hour sessions on everything wine. Last night was history...pretty darn cool. Did you know that possibly as early as 6000 BC, people were finding naturally fermented wine (in rock crevices, tree trunks, etc) and drinking? We got to try some of the older varietals...eh, and I will stick to the newer ones, I think.

I am soooo excited about the PS and the Cab Franc. In for one and will cross my fingers that it arrives prior to my wine party in a few weeks.

If it were simply up to the bank then no, I wouldn't be ordering at all. The issue is that the CREDIT CARD is not stopping me from ordering more. Luckily though I always pay my credit cards in full every month. Though we'll see how/if that changes once I'm able to find a house I want to buy....THEN you'll see my ordering come to a grinding and painful halt.

Mine wasn't a new years resolution, but I was doing good all last month with the other deals (don't like chardonnay, don't particularly like champagne and didn't need any for parties), and then they pop up something like this which looks soooo tasty. Even though I already have a cabinet full of wine and I'm averaging like one bottle a week at most.....

Since I missed the labrat cutoff this morning, I will await the labrat reports. I'm an easy sell, though, since I love Cab franc and Petite sirah, though I've never had any from Santa Barbara before.

Often CF has a greener, more vegetal aroma and taste when compared to other reds. Then again, I've had a cab franc with very little of those characteristics (the one that comes to mind was made from WA grapes). I wonder if the winemaker can address this aspect of this particular bottling, and describe what category this cab franc most resemble: a fruity cab sauv, or a something more striking with an olive-green pepper bouquet.

Winemaker, Megan McGrath, is running crazy today, so I'm jumping in...
The 2003 Cab Franc is more of a fruit bomb (think blueberry) in this vintage and also makes up 5% of the 03 CS. CF can be more vegital (olive, herbs) in leaner years but 2003 was a big-fruit year in SBCo.

Our 03 CS has all 5 classic Bordeaux varietals: Cab Sauv (83%), Cab Franc (5%), Merlot (5%), Petite Verdot (5%) and Malbec (2%).

We hope you'll enjoy these wines as much as we have... The '03 CF is coming to you from our library and there is usually only enough PS to make it to the tasting room.

I love blueberry! It's one of my favorite flavors to find in wine.

Believe me, there is nobody happier than I am about your having enough PS to offer it to us. How would you describe the flavor profile of your PS? I've had those that are red-fruit oriented (e.g., Concannon, Fife), dark-fruit oriented (e.g., "traditional" PS, Bogle, Markham, KR's Konkoktionz), in-between, like black cherries and black raspberries (Stag's Leap, Guenoc), and coffee/chocolate/creamy (Rosenblum Heritage Clones). It seems like the Ollalieberry taste suggests a dark-fruit profile, but as the resident PSycho, I would appreciate some input from the producer.

Also, what are the aging windows on these wines, particularly the PS? Kent Rasmussen has been on here more than once preaching the virtues of old (15-20+ year) PS, and our resident cali expert RPM has waxed poetic about the delicious case of mid-70's Concannon PS that he got for $60. Do you subscribe to the "two drinking windows" theory (separated by a dumb period from about 8-15 years from vintage) of PS aging?

Pretty much the same thing. We use a basic tool with a long handle and disc at its base and gently punch-down (submerge) the cap. Since these small lots are many times fermented in smaller boxes (apx 4x4x4), you can reach over the bin or from above to achieve punch-down. It's a good workout and if you have dozens of bins you can give your arms a break by using a pneumatic punch-down device which can be hand held or suspended from an overhead track. If you try to just use your hands you'd fall in head first - not such a bad thing.
