I use Argon gas.

It might be all smoke and mirrors, but it seems to make a difference.

First I transfer the wine to smaller bottles, then gas it with Argon gas (winesave.com), then cork it with a new Zork ( http://www.zork.com.au/USA/products-still-wine.html) every time ). I also finish the wine within 3-5 days so it doesn't have a chance to go bad.

What a day..I went in for an oil change....came out with 4 new tires...the place I went to didn't try to rip me off like the other places in the past have...The tire guy actually pro-rated 2 of the tires that I didn't even purchase from them, plus he gave me a free alignment... so I can't complain.... we have had rain all day today.. most of the day yesterday.... we need the rain, so I'm not complaining.... too much!
some areas have had 5+ inches of rain already!!

Yeah, ok. I've got an argon tank as well. I know argon is an inert gas, and more $$$ than nitrogen, but can you really tell a difference between the two?

Those Zorks are what came on a bottle of Paso Project red I had some months back. Distinctive closure and easy to spot within a gaggle of bottles.

You buy these -new- ? And apply by hand or machine?

Smaller bottle, absolutely.

I have never gassed with nitrogen, but I doubt I would be able to tell a difference.

The Zorks are new and applied by hand. My wife first got me some from somewhere online sometime ago and I fell in love with them. Sometimes they can be difficult to get on, but they work well. Just put the bottle on a flat surface and use the palm of your hand to firmly apply pressure down on the Zork until you feel it "snap" into place.

The argon gas is heavier and thus settles on top of the wine, creating an oxygen poor surface with the wine that's left in the bottle, thus slowing oxidation. Or, that's what they say...

Not sure what yet. SWMBO will be gone and since she can't drink right now, I'm trying not to open anything nice without her. But she's leaving so it's on. It's going to be something Italian. I'm thinking either a Barolo or a BdM. Or maybe a Caburnio. Decisions decisions...

With pizza, I would prolly skip the B's you've listed and consider a chianti or something a little less earthen, although I guess the type of pizza could also make a difference. That said, it sounds like you're not going to go wrong. : )

That is a really good call, Doc. I didn't even think about that. Looks like it's going to be the Tenuta Monteti Caburnio. More fruit-forward than the three big Bs. Decision made!

I so want to go! Not sure if I can justify it especially since I think I'd rather be at crush this year. Maybe next year or the year after I can attend the awards dinner.
