Cambozola!

It's a very rich cross between a brie type cheese and a blue type cheese, consistency of a triple cream. SO GOOD! Maybe I'll have some tomorrow!

Real Emmentaler from Switzerland (no other country can make it like the Swiss) made from unpasteurized milk or a good, well aged Provolone, you know, the kind that makes your cheeks flush when you bite into it.

I *love* good aged gouda that is hard and has those wonderfully crunchy calcium deposits, but am not that keen on smoked gouda, actually.
