it comes packaged nicely, with insulation and a frozen freezer pack. last time i got it, it arrived very cold and frozen.

I still have one of the four from last offer. They are delicious, but i also use truffle salt with them in a dish to embolden the flavor. I used 1/3 of a container on a turkey and it came out wonderful. I'm pretty sure they were very cold on arrival with a cold pack insert. They keep well in the freezer, but after several months the truffle flavor does start to vanish.

I picked up a set last time and they arrived in great condition; froze them and enjoyed the hell out of both for months; the black in particular is insanely good, even (contrary to instruction) all melted with a really good bread. Looks like you are in for a great surprise. The butters are flavored with rare, exotic, and superbly aromatic truffles. The black has an earthy, almost musky flavor, and the white an intense, knock-your-socks-off flavor. These butters are different not just for flavor, but also in how they are incorporated into your meals. They are finishing butters - a swirl in mashed potatoes, a knob whisked into a pan sauce, a swipe on a bruschetta. These butters' aromas are released when heat is applied, but are too volatile to survive use as a cooking fat. Hungry yet?

Yes. Also, butter is a wonderful traveler, it can go from frozen to warm to melted to frozen again, without affecting its qualities. Remember the days before refrigeration?

We do tuck in a note to toss it in the freezer when you get it, and it'll keep forever. You can use a little at a time or throw the whole container into a vat of mashed potatoes.

Truffles? At $30? Truffles are some of the very best "finishing" in the world. And good truffle oils are worth their prices in gold.

When I received mine in Los Angeles, the ice pack was very small and the product was room temperature when I got it. But it was still fine.

ADdB also had some various "grilling butters" a while back that were not so great. Or at least, the one that was supposed to have black truffle, didn't. We just got a little log of plain butter.

What are the chances of wine.woot selling the olio nuovo again this year?

I skipped, then took a gamble on the glowing recommendations of the balsalmic vinger four days later. It was so delicious I (a) bought more when it came up again this past Spring and (b) regretted missing the olive oil.

The supplier, Casa de Case, states that there is a limited supply (only one air shipment) and that it's arriving early this year.

We received this last year around christmas time and it was mind blowing good. I used it new years eve on a risotto and can't wait to try another round. To those unaware of the difference between black and white truffles: as auxdelices said, these are finishing butters, however, white truffles to lose a lot of their distinct characteristics when cooked, while black truffles do not. So the white truffles would be better for the previously mentioned mashed potatoes, but the black truffles would be the much better choice to finish a pan sauce.

TL;DR - lots of heat is the enemy of white truffles.

Well, in about 5 billion years or so, the Sun will turn red, expand and engulf the inner planets. I'm not convinced that even this delicacy will survive that.

Yay! It's back! Gifted the black truffle butter last year and it was a huge success. Kept the white truffle butter for myself. Now I can finish up what's left in the freezer.

Ingredients are high butterfat butter, truffles and mushrooms, salt and natural flavors. NO common allergens (except dairy-it IS butter!. No strange hydrolyzed proteins or unpronounceable chemicals. No meat by-products. NO kidding!
