RPM has posted an extremely fascinating and interesting history of how wine tasting and production has evolved over the years, a great read for all, in the A Cat Died in My Mouth Thread. Required reading for any serious (or even moderately serious) oenophile indeed.
P.S. My impoverished synopsis doesn't do justice to the wealth of info in the post.
