Due to doctor/health issues I've been on a healthier kick (10lbs in the past few weeks!) I'm more concerned about what I shove down my throat. I am new to the world of fancy cheeses (I thought Kraft's do it yourself grater was high class). What would cholesterol levels and trans fats be? How large are these wedges, compared to say decks of cards? What should a serving be?
