In my tasting room, at my winery, I can create that experience - and the cases do go out the door. All I can do here, in the absence of that experience, is ask you to take a shot. I am really not interested in selling poo. We are very very serious about what we put in the bottle. We have an honest gravity flow winery - it's like five stories from top to cave. (A lot of grumbling from the production staff, but worth it I think.) We are a 100% punch down winery - no pump overs (I can elaborate later if you want.) The rubber chickens and the "vibe" aside - we are deadly serious about kicking out some seriously good juice. And once it is in the bottle... it's all about the FUN! And the rubber chickens."

The tanks outside will be under different conditions. Better to have all of the wine in one place. Note 1: Barrels do wear out, at which point we recycle them into planters etc. Note 2: With some of the whites, we do do split stainless and oak fermentation and aging."

(8:09 PM) eljefetwisted may not have expected it, "There were several things that led us to what we kinda call "The Spanish Inspiration". The most compelling of course was simply that varieties like Tempranillo were already being grown in the area and producing delicious wines (Stevenot). And we personally like the Mediterranean varieties - we fell in love with Viognier, Marsanne/Roussanne, Syrah, Grenache, etc. when visiting Zaca Mesa back in the 90's. Couple that with the desire to find a business niche..."

Our 2002 Grenache is now moving into the "drink soon" state, but the 2002 *%#&@! and 2002 Temp are both doing fine. Just based on gut feel I would drink both of those within the next two years. So, with the 2005 Grenache you have a year or two, and the other two have even more room to store. Holding any of them until x-mas is fine."

I prefer reds, but really enjoy lighter wines in the summer...my range isn't too wide in the white category, so far Chardonnay, Sauvignon Blanc, and Pinot Grigio have been my safe little forays in the world of "lighter wines". I need to be educated on what this offering is all about. "

The Grenache is the lightest of the 3, and is the red I will pour for people who say the only drink white. On a hot day, cooling the Grenache down to say 50 degrees makes for a refreshing wine with BBQ stuff. (Not in the fridge all night cold, but in the freezer for 20 minutes cold - set a timer!) The *%#&@! blend is a medium weight, and also goes well with BBQ and chilling down a little - but it has more body and more going on. The Temp is the biggest of the three. It will have those tannins that pair so well with things like steak and lamb. If you decide to go for it, I do recommend you try each of the wines with food, to give your palate a chance to catch up with the idea of red wines. Most importantly have fun with it!"

(6/3/2008 1:31 PM) jonstrib digs a little deeper, "wondering if you can explain the differences between the various tempranillos, granaches and mourvedes in the various offerings. just availability for sourcing or is there some real differences that the alchemey process then takes in a different/preferred direction rather than from a single vineyard. on the aging, you mentioned earlier on that you want to avoid over-oaked final product (think that's an accurate paraphrase ). does the % of old and new oak temper the "oakiness" while also allowing you to cycle in new barrels? finally, any statistically significant differences in the pH levels: seems like they're all in the food friendly range (even though they may pair up differently)."

We choose sources based on things like location and soils, but also based on the growers themselves. For example, we're very happy to be on board with vineyards like Tanner and Rolleri - they've been the ones that planted Tempranillo and Syrah up here, and showed the way for the rest of us. We also have some new vineyards (like Dalton and Parcel 17) that have worked with us to plant the right clones and rootstocks (which for me is a little black magical but I've come to trust my nursery people on these things!)..."

If you haven’t seen it, check out this Tempranillo blog on the subject. Seems promising, but it appears that if it’s released out of Rioja it will have to be in a blend and even that is a ways away.…we’ll have to wait for more from the Riojan authority on that. IMO if it’s successful, it’s a safe bet someone will bring it elsewhere."

They accumulate in the neck because we store the wine upside down in the warehouse. You can just pour out a little to wash the neck out (this also acts like a mini-decant, for what it's worth.)"
