I live in CA and here we have access to the Napa Valley Naturals Cask 23 cherry wood aged 18-yr Grand Reserve Balsamic vinegar (Trebbiano grapes at 4% acidity). Liquid gold! With the recession, you can get this easily under $40 for 375ml. I've never tried the Cavedoni, does anyone know how this compares to top tier CA aged Balsamic vinegars? The website says at least 6% acidity, does a variation of a couple percentage points matter or does that really depend on your taste bud sensitivity in regards to bitterness? Looks like a good find, but with prices so good on premium aged Balsamics, I'm not sure I'd pull the trigger on this one. Thoughts???
