cheron98 wrote:And when they charge more for their wines not because the wines are necessarily better, but simply because they are biodynamic. We went to a winery last year in Niagara area (remember klez? who was that, Tawse?) that was BD, and klez asked the dude why their prices were significantly higher than similar wineries in the area, and the guy could only say "Because we are biodynamic". Not because he could cite medals or accolades for their wines that would denote a higher quality product. Just because they are BD. I have a problem with that. Of course, we did not find this out until after I had already purchased two bottles. The wines were good, sure, but not good enough to justify the higher price.

I remember them - that was an epic fail. To their credit, they did not tell us up front that they were biodynamic and therefore their wines were better. I honestly enjoyed most of the wines there (Tawse) but felt their prices were a bit on the steep side. When that was the reason it became a clear no-buy situation for me. If they'd been able to say "our yields were tiny that year" or something, maybe I would have sprung for the $45 Cab Franc.

BTW, I'm no great cook, but can I ask someone to make a suggestion for me?? I don't like the idea of condensed milk, on principle. Comes from a can, and there has to be a natural thing that it's trying to replace. Any thoughts? More proper milk, cream, or something else? I'm not experienced with soups, but I know that all natural is the way I want to go.

You could make sweetened condensed milk easily enough...just, um, condense the milk with a bunch of sugar in it until it is the appropriate thickness. Gotta be careful when boiling milk, though...don't want the proteins to all coagulate. I think Alton Brown also did a thing on this once, maybe to make tres leches cake.

If you like the wine buy it, if you like it but you can't afford it, well there are an awful lot of wines in that category, at least for me. There is plenty of scientific evidence that biodynamic is BS. There are so many "free market" advocates on this forum that I can't believe people here hating biodynamic wines "because they cost more". Who cares, caveat emptor, there are many non biodynamic on the market that are way overpriced too.

I agree if that's the argument - but to me the argument is actually that I will be more loathe to spend on a wine that is high priced because it's biodynamic. Plus, it's not a hatred of the wines - just a strong dislike of the price hike due to biodynamics. If it's a $20 wine that I think is worth $20, or better yet, $30 then I will buy it. But if it's a $40 wine that tastes no better than a $25 wine and the justification is "biodynamics", then ciao.

I agree with you. I was doing an admirable job of not commenting on this, one of my "pet" issues, but what the hell, here we go. When I think about the abortion debate, the person I'm thinking of is a pregnant woman in a desperate situation. It might be a desperate situation for a variety of reasons, most commonly it's financial but sometimes there are health concerns or nefarious characters involved. Surely nobody would argue that abortion should be undertaken without putting a lot of thought into it. However, when we cheer for making it as difficult as possible for those who need it most, I think we're forgetting something. We can talk about so-called "personhood" amendments, but let's not forget that a pregnant woman is certainly a person, not an incubator, not some subhuman whose concerns can be completely disregarded in favor of another. Any sincere debate on this issue must include consideration for the person who's doing all the heavy lifting.

Cockburn Quinta Dos Canais Vintage Port 2007

I am not sure if it is the same variety that I had when I went out for dinner. But I know It was Fonseca, cause I love saying the name... don't ask....

It was just a nice port, not too sweet, some rasiny, plumy taste maybe almond? I don't remember all the yummmy tastes. Just that it was yummy!!

How is the Cockburn port?

Got some of this Fonseca Bin 27 from Costco for dirt cheap, haven't opened one yet however only mid 80's on CT
https://www.cellartracker.com/wine.asp?iWine=9498

and the WTSO is this with CT in the 90's

and here's the link for your Thief listing, also with CT 90's

Lots of Fonseca listings, only four Cockburns.
I'm thinking either of the latter two could be pretty tasty, but others here are more qualified to render an opinion than I...

I think I've had the latter one and really enjoyed it. Although I think I got mine for a steal when it was on sale at my local wine shop. Really, really need to update CT. Think I still have one in my locker.

Port is best stored in a cool, but not cold, dark location that has a steady temp. You can lay it on it's side if it has a cork.

Check out Fonseca LBV (Late Bottled Vintage) Port. I can usually get the LBV ofr about $20 and we really enjoy it. The true vintage port is better, but much more expensive and 20 years in the future.

Right..you can get Lactaid milk, which has the lactase enzyme already added. Or you can buy the enzyme in pill form and take it whenever you start drinking milk or having a lactose-infested dish so that it takes care of the troublesome disaccharide before if throws off the osmotic balance further down. You can get packs of generic store brand lactase enzyme for maybe 20 cents a pill. Look for the pills with at least 9000 U of lactase.

As for milk with L. acidophilus, that's exactly how one makes yogurt, although usually yogurt also has L. bulgaricus and S. thermophilus.
