2015 Peace on Earth Cabernet Sauvignon
The wine has violet hues that move to cherry red toward the edge. The aromas have characteristics of blackberry, blueberry, and raspberry; with elements of vanilla and coco powder.  The wine has a fuller body with flavors of darker fruits coupled with white pepper, fresh rosemary and sage. These earthier characteristics provide a finish that is lengthy and balanced.  This wine would go well with Smoked Brisket with a dry Texas rub, Duck Confit over a bed of Lentils, or even Grilled Salmon with Sage butter sauce.
 
The grapes that produced this wine are from the best regions that California has to offer. The fruit benefits from warm sunny days and cool nights as a result of gentle breezes coming from the Pacific Ocean. This allows the fruit to mature and have a proper balance between fruit character and structure.  The fruit was harvested at optimal ripeness and was crushed and fermented in stainless steel vessels.  The wine was then aged in experienced barrels and allowed to age for nine months.  The blend was then created and prepared for bottling.
